Great Grandma Johns' Pasties

This is almost exactly like my Scottish mother makes with one exception. On top of the meat layer she dots the pasties with little butter cubes. Love the look of the pasties made by caustic_soda. They look exactly like my Mom's!

Chicken Noodle Casserole I

Three of my grandkids spent the day with me yesterday doing Christmas crafts. I made this casserole earlier in the day and put it in the oven in time for supper, along with fresh green beans and cookies for dessert. OMG, the kids wolfed it down at the speed of light. It was just the right mixture for kids. I did add half a small-dice onion and about 1/2 tsp of thyme, but I wouldn't add the thyme next time. I also used 12oz. of broad noodles and another can of soup and an extra 1/2 cup of sour cream. All in all, this was a huge hit!

Truck-Stop Buttermilk Pancakes

My son, a professional chef, came for a visit this summer and I suggested we try these pancakes. We were both thrilled at the delicious way they turned out. He is going to keep this recipe and put it into his rotation. A big +PLUS+ for this recipe that we made exactly as written.

Cucumber Slices With Dill

After making this recently for a family party, my brother said if he could only have one thing to eat for the rest of his life, Cucumber Slices with Dill, would be it! Can you imagine that he loved it that much? I added a bit more dill than the recipe called for, but that is the only difference.

Ham Cake-ettes

Don't make my mistake! I used instant mashed potatoes and got a gluey, soft, tasteless patty. I added extra instant potato to the mix and put it in the fridge for an hour before frying thinking I was so smart. Not so!

Ken's Perfect Hard Boiled Egg (And I Mean Perfect)

Wow Ken, you 'cracked' the code on hard boiling eggs to perfection! I live at a high altitude and have always had a problem getting them just right. That nightmare all stopped today. Even though you did all the research, I feel like the smart one! Many thanks.

Orange Cream Cheese Spread

I doubled the grated orange rind and 1/2ed the vanilla. Everything else was fine. I spread it on cranberry, lemon, walnut artisan bread and it was GREAT. A nice change, with all the ingredients on hand most of the time!

Caramel Popcorn

I was very disappointed in this recipe overall. Yes, it was super easy, and I followed the directions exactly. However, at the end the taste was just lacking and had no spark or yummy factor. Kind of a bitter after taste too. I gave it two stars only because it was certainly edible and my grand kids will finish it up. Not one I'll make again.

Simple Taco Soup

Loved this recipe! So easy, quick and tasty. I didn't change much, just used what I had in the cupboard that was "close" to the ingredients, for example I didn't have stewed tomatoes, so just used regular diced tomatoes, and only used one pound of ground beef, which was plenty. Nothing too drastic. Yummy!

Bread Pudding II

Far too much cinnamon IMO! Next time I will reduce it by half or less. And if you are doubling the recipe, don't double the cinnamon. Just too strong and overpowering. But, I doubled the vanilla. I reduced the heat and baked the pudding at 300 degrees for a half hour longer than recommended. A lovely pudding overall.

Tasty Baked Meatballs

Sooo E-Z to mix up quickly! I didn't have Italian-seasoned breadcrumbs so just subbed 1/2 tsp. of Italian seasoning to the mix. Other than that I followed the recipe exactly with grand results. I made a bunch and froze them a dozen to a bag. Now I have instant meatballs in a flash!

Slow Cooker Stuffing

I tried this recipe for the first time for Christmas this year and was thrilled with the results. One caution is DO NOT put more than the recommended dry herbs in the mixture. I thought it seemed a bit bland in the initial form so added a bit more sage and poultry seasoning. Mistake. It was not horrible, but certainly would have been better had I stuck with the recommended amounts. This is my go-to recipe for stuffing from now on. Thanks Gayle for sharing this awesome and easy recipe. Happy New Year 2012!

Bean Soup With Kale

I was very disappointed in this soup! I feel like I wasted the ingredients overall. WAY TO MUCH garlic and Italian seasoning. No depth of flavor. Kale was no asset, spinach would be much better. I won't be making this again.

Holiday Chicken Salad

Made this yesterday to have it ready for company today. What a hit! Did add craisins, white onion and I toasted the pecans. No green pepper. If I had one hesitancy it would be to cut down on the seasoned salt. Too salty for my taste, but certainly did not ruin it at all. Will make again for sure.

Cornish Pasty

I usually use round steak for my pasties, but this time I only had a rump roast to use and found this recipe to try. Seemed dryer than I usually like, but still very good. No carrots for this girl and I used my own pastry. Further, my Mom dotted the filling with butter before closing the pastry to add richness and moisture. I didn't use the milk on top, I just like the natural crust. My pasties are bigger than these as well. The best thing I learned from this offering is to preheat the oven to 450 degrees and cook pasties for 10 minutes, then reduce to 350 degrees, however I found I needed an hour to cook, not the 35 minutes as stated. All in all a success!

Chocolate Chocolate Chip Dream Cake

I am shocked by the many negative reviews of this cake! It turned out GREAT at my house. I used a yellow cake mix, butterscotch pudding and butterscotch chips and it turned out lovely. Poured it out on a lined sheet pan, then when done frosted the cake with vanilla buttercream. I then cut up the squares and put them in baggies in the freezer for a lovely treat whenever I'm craving a taste. Follow the directions exactly and you can't go wrong.

A to Z Everything-but-the-Kitchen-Sink Chocolate Chip Cookies

Oh my goodness these were wonderful cookies! I read all the comments and have to disagree with so many of them. I found the dough to be very workable and blended wonderfully well. I used rice cereal rather than corn flakes and had no mace to use so did without, other than that I made the recipe exactly as written. They spread some but not excessively, had a lovely crunchy but soft bite and made a large amount. I will definitely keep this recipe upfront for the future, especially when I want to use up bits and pieces of leftover ingredients. Very flexible recipe.

Quick and Easy Tuna Casserole

Made this yummy casserole yesterday and enjoyed it for supper. (Froze the remainder for a later meal.) I used a 22oz package of large macaroni, added an extra can of mushroom soup and 1/4 cup half and half to make up for the extra pasta. Also didn't have cheese slices so I cut up a brick of processed cheese into small cubes and put them in the mixture to melt. Otherwise everything was the same. It stretched the recipe and didn't change the taste at all. It was creamy and delicious. Will be a huge hit with grandkids.

Orange Juice Cake

A good cake for a change. I'm not sure I would make it too often. I subbed orange juice for the water in the recipe and added a bit of water to lighten up the batter. You don't need as much glaze as called for as it overpowers the cake and makes it soggy. I like a firmer texture to serve on a plate instead of a bowl. A nice fresh taste though.
