Ham Cake-ettes
Don't make my mistake! I used instant mashed potatoes and got a gluey, soft, tasteless patty. I added extra instant potato to the mix and put it in the fridge for an hour before frying thinking I was so smart. Not so!

Ken's Perfect Hard Boiled Egg (And I Mean Perfect)
Wow Ken, you 'cracked' the code on hard boiling eggs to perfection! I live at a high altitude and have always had a problem getting them just right. That nightmare all stopped today. Even though you did all the research, I feel like the smart one! Many thanks.

Orange Cream Cheese Spread
I doubled the grated orange rind and 1/2ed the vanilla. Everything else was fine. I spread it on cranberry, lemon, walnut artisan bread and it was GREAT. A nice change, with all the ingredients on hand most of the time!
