Chicken Piccata with Artichoke Hearts

Unbelievably delicious!!! I followed the recipe except I didn't pound the chicken breasts which allowed for the extra 20 minutes cooking at the end. The extra cooking is important as the lemony garlic deliciousness infuses itself into the chicken -- oh so good! I can't wait for lunch tomorrow! I did also add SOME of the artichoke liquid and SOME of the caper liquid -- you need those flavors!

Mom's Baked Egg Muffins

Fabulous!!! I used Pepperidge Farm very thin bread and it worked perfectly! Also, the muffin pan I use is for larger muffins (not cupcakes) only 6 muffins in the pan. To grease the muffin pan make sure you use Pam NOT butter! Such a versatile recipe - any type of breakfast meat, any type of cheese and add any ingredient (peppers, onions, cooked potato, etc.) Just love these -- easy enough for quick breakfast on the way to work - impressive enough for company brunch! Thank you for a fabulous, easy recipe. P.S. I also love the eggs cooked a bit softer -- the yolk soaks into everything and makes even more deliciousness!

Amazing Italian Lemon Butter Chicken

OMG -- Amazing! I was skeptical as I tasted the lemon butter sauce while it was cooking and thought Yuck! However, when blended together with the other ingredients -- absolutely fabulous. I was so impressed and so was my 11 year old daughter who really does dislike pretty much all food! She absolutely loved this! While it uses alot of pots and pans and bowls -- so well worth it! I wouldn't change a thing and will definitely make this again and again (the fat content is well worth the delectable taste)!!! Thank you for this recipe!

Bread and Celery Stuffing

Just love this recipe -- easy enough to make for weekly meals -- occasionally I will add 1 lb ground chuck and just have a full lunch for work. For the cubed bread, I use Brownberry Premium Stuffing (Herb Seasoned). Very versatile -- or just darned good as written -- thank you!!!!

Daria's Slow Cooker Beef Stroganoff

When I say good, I mean good -- thank you so much for this posting -- first time I EVER made beef stroganoff and my son actually said it was better than his grandma's!!!! Absolutely delightful, moist, tender meat, I did season meat with Lawry's season salt and only used 1/2 the sour cream (the wine really does "sour" it up a bit). Thank you again -- I WILL make this again and again!!!! Oh, served it on thick homemade noodles -- absolutely divine! Note: What's stroganoff without green olives? I added about 3/4 cup sliced green olives with pimento.

Aussie Chicken

Outstanding -- delicious taste -- all the ingredients blend perfectly. Only mistake I made to "save time" -- I didn't pound the chicken breasts -- you MUST pound the chicken -- next time, I will.

Awesome Slow Cooker Pot Roast

Absolutely delicious! Perfect seasoning, tender, tender, tender! Served with homemade browned butter noodles and garlic bread. Kitchen smelled great and my 11 year old daughter and I just loved it! Makes tons -- left overs should be wonderful, too. P.S. my dogs loved the gravy treat on their dinners!

Chicken Piccata II

Very Good! Used 1 cup boiling water with 1 chicken bouillion cube, added 1/2 cup Sauvignon Blanc, poured over chicken. With 10 minutes left for simmering, I added fresh sliced mushrooms and 1 4 oz jar of capers. Excellent lemon flavor -- moist, juicy chicken. Very Good reheated, too.

Baked Salmon II

I can now cook fish!!!! Love fish, could never ever cook it properly! This was outstanding, moist, flavorful, perfectly seasoned, etc.! I served it over angel hair pasta with mushrooms, onions and mild banana peppers -- a true "PARTY IN MY MOUTH!!"

Slow Cooker Italian Beef for Sandwiches

Absolutely the BEST Italian Beef EVER!! I used 5 lb top round, 1 can beef broth, 2 cups water, 2 pkgs dry italian dressing mix and all the other seasonings as listed. After 5 hours on high, I shred the roast, added one 16 oz jar of mild gardienera and turned down to low for one additional hour -- To Die For!! Also served on baked garlic bread rolls with melted mozzarella cheese. No more restaurant Italian Beefs for us -- these are better.

Baked Pork Chops I

Well, I'm getting very close to perfect pork chops. These were the most tender I've ever made, but not the most tender I've ever had! Flavor was very good. Added some dried, chopped onion to the soup/wine/milk mixture, as well as a bit of garlic. Used 1" thick boneless pork chops and served with homemade buttered noodles, fresh green beans and garlic bread. The gravy is great on the noodles, too. My 11-year old daughter was not crazy about them -- so, off to try another!

Freak'n Good Ribs

I've got to try this again! I had WAY too many ribs (6 lbs) and didn't make enough marinade! Also, I marinaded the ribs for 2 nights (way too long when you're marinating with citrus). The flavor was OUTSTANDING, however, mine were not tender at all -- that's why I have to try again -- I KNOW they'll be fabulous! My 11 yr old daughter absolutely loved them -- and she's the pickiest eater ever.

Burgundy Pork Tenderloin

Okay, I give this a 4 1/2! On Saturday, made the Daria's slow cooker beef stroganoff from this site (which is outstanding), for my son and his girlfriend -- absolutely NO leftovers for me and my daughter!! So I pulled out a pork tenderloin and let it thaw for Sunday's meal. I was somewhat hesitant to make this because of the mixed reviews but it seemed like such an easy, elegant "Sunday" meal and I had all the ingredients! Boy am I glad I made it! It smelled delicious when cooking! I followed the recipe but used a bit more Lawry's seasoned salt for the pork and more pepper. The wine did not evaporate completely and I had plenty of liquid to make the gravy. The cooking times were right on the money (the pork does continue to "cook" while resting on a plate while you make the gravy). I used a whole packet of brown gravy mix as written and just some flour to thicken the gravy to our liking. The pork was so tender and juicy, the celery added a wonderful flavor and crispiness to each bite and the gravy, while I could see it would be salty for some tastes -- was excellent! This is a keeper and I will make again. Even my fussy 11-year daughter liked it (and she really dislikes all meat). Okay I made it more kid friendly by serving it with the ever popular mac and cheese -- but even that went well with this meal. Thank you, Kathleen, I will also make this for our family gatherings!

Baked Spaghetti Corn

Contrary to several other reviews, this was quite good and filling. I followed the recipe except, I used butter (no margarine here). One note that may make a HUGE difference -- It's a bit confusing (at least to me) when in the ingredients, it calls for 1/2 a box of spaghetti, but in the directions it calls for ONE CUP of broken spaghetti. USE ONE CUP OF BROKEN SPAGHETTI. I used Barilla Angel Hair Pasta and it came out perfectly cooked throughout. I probably did cook it for @45 minutes but it was yummy!!! I'm having it for lunch today, reheated, as there are only 2 of us eating. Thank you Molly.

Make it even better -- after melting 3 TBL of butter, add a medium sized diced yellow onion and 1/2 tsp - 1 tsp (depending on your taste) ground mustard -- YUM YUM

Potato Casserole II

Very, very good -- would have given it a 5 but my 9 year old daughter just didn't care for these. Maybe a bit too much "sour cream" taste (which I love). The onions are WONDERFUL in these -- next time I'll add more and maybe some dried minced onion. Really good reheated in microwave, too.

Garlic Cheddar Chicken

Pretty darned good, easy and quick! Great for a weekday meal. My 11-year old picky daughter even had seconds. That, in itself, says a whole bunch! The chicken was extremely moist, tender and loaded with great flavor! The cooking time was absolutely perfect. And, boy does it make a HUGE difference when you pound your chicken breasts (usually I don't):P Also, definitely for garlic lovers -- we are, however, my daughter woke up the next morning and said she still tasted the garlic -- oops!
