Barley and Mushrooms with Beans

Yum!! I made this for my family and we just loved it, the next day I put the rest on the stove with some water and it turned into a wonderful soup!! I like it better as a soup and will make it again..

Peach Upside Down Cake I

I made this recipe for my mother, I used canned peaches instead and in the batter I used 1/2 cup of oil instead of the butter. The cake was SO FLUFFY and good that my mother just LOVED it! I will be making this recipe again.. Thanks! Note: I will try pineapple too and I'm sure it will taste good.

Vegetable Pasta Casserole

I added this recipe to my box a while back because I thought it sounded good.. Just today my mom made lunch and it was something very very similar to this, She said she just made it up but since it's so similar I wanted to rate this recipe and say that is came out really really yummy and you should try it!

Broccoli Casserole II

My family LOVES this recipe, I made it twice so far and it's just wonderful.. After preparing everything I just sparkled some "Mac & Cheese Mix powder" over the rice and mixed well until it melted and after putting it into the cassarole I sparkled some cheddar cheese over the top..

Chocolate Zucchini Bread I

Very Yummy! I didn't have chocolate chips so I melted cocoa powder on the stove with some butter and it turned out great (didn't really need any extra sugar in the chocolate) the recipe called for enough sugar! Instead of making 2 loves I made one bundt cake and we all enjoyed it! Thanks!

Flourless Peanut Butter Cookies

Very good!!! The first time I made it they were very good but too sweet so I cut down half way on the sugar the second time and they were PERFECT!! Brown sugar would add a nice touch too. Thanks, such an easy recipe.. Anyone can make these!

Easy Mashed Potato and Roasted Vegetable Enchiladas

I used the idea of this recipe, But I made it sort of like a vegetarian sheppard's pie. I cut up 1 large zucchini then salted it in a strainer, I let it sit until alot of water came out, then I rinsed it with warm water and squeezed it tightly with my hand so all the water/salt can come out, Then I chopped carrots and mushrooms and added to the zucchini with some oil, salt, black pepper and chilli powder. After awhile I roasted all the veggies in the microwave until they were tender, I then put a big glop of home made mashed potatoes on top, spread it out with a fork and broiled it in the oven just to get abit crispy on top! It was really good, Me and my mom ate it, the mushrooms were so good and the zucchini wasn't full of water since I salted it, I made 1 pie plate and have a very tiny bit left (Can't wait to eat it today!!) Tortellini Salad I

YUM YUM!!! This salad was very very good! I didn't use the feta cheese though, I added broccoli and I also doubled the tortellini by using 2 packs of green tortellini instead of white and I used dry mint, It was wonderful!! The dressing that this recipe calls for is abit too much for that amount of tortellini so that's why I doubled the pasta amount and it was perfect! ----------------- Thanks for the recipe, We didn't even chill it, we ate it right away and it was GOOD I hope to use it alot as my whole family enjoyed it!

Strawberry Spinach Salad I

Very good!!! When I told my mom about it her mouth started watering ... We made it and we just LOVED IT!! I tried the spinach salad with pears once and it was also great.. We are thinking of trying it with mandarin oranges and pomegranate fruit!

Vegan Black Bean Soup

Yum!!! Great recipe and so easy!! :) I used 2 cans of beans instead of 4 for the whole recipe, same amount of celery,onion and carrots.. I browned them then added 2 cups of water, the beans, corn and some veggie soup stock.. Then mashed the remaining can of beans with the tomato and added it in... I used a tbsp of each chili and cumin and it was great!! My family enjoyed it very much.. Will be making this again and again....

Basic Pasta

Wonderful!! I doubled the recipe and it was a great smooth dense dough..It was good rolling out and yummy to eat! I rolled it out and rolled it up like a jelly roll(with out flouer on it) and cut thin strips to make fettichini and dried the strips on a broom stick covered with a towel being held up between 2 chairs, I let them dry totally and pakaged half the amount for storage and boiled the other half and it was VERY GOOD!! Please try it..So easy, fun and so GOOD!! Thanks!! Thanks
