Oatmeal Banana Nut Bread

Amazing! I followed lots of the suggestions from other reviewers: 1/4 c. butter & 1/4 c. fat-free vanilla yogurt in place of the shortening (I'm not one to substitute for fats usually, but I definitely don't miss the extra butter!), half and half brown sugar and white, added 1/2 tsp. cinnamon, extra oatmeal and cinnamon/sugar on top of the loaf, and baked at 325 for an hour. I also used a combination of flours - 1/4 c. rye (trying to use it up!), 3/4 whole wheat, and 1/2 c. white. I think the wheat flour goes well with the nuts. Did half walnuts and half pecans and probably put in a little more than 1/2 c. The bread is dense, moist, and the coating on the top is excellent. A Fantastic Margarita

This may not be a traditional margarita, but it is delicious! I like to keep the limeade concentrated and just add a little water, rather that making as the package instructs, for a more limey flavor.

German Potato Pancakes

These were wonderful! I've tried to make potato pancakes before by just estimating amounts of potato, onion, egg, etc. with mediocre results. I followed this recipes exactly, cooked them in a cast iron skillet, and topped with sour cream. Excellent!

Tasty Tuna Burgers

I was looking for something different to do with tuna and came across this recipe. I made them with what I had on hand, so there were several changes - regular breadcrumbs (heaping 1/2 c., as suggested by others), dehydrated minced onion, no celery, ketchup instead of chili sauce, and no dill weed. Even with all these substitutions, they were fantastic! I put Miracle Whip on mine and my boyfriend used hot sauce. I think tartar sauce would also be good.

Quick and Easy Home Fries

I made these in my cast iron skillet, used 2 T of butter, which was plenty, and added onion during the second 10 minutes. The timing was perfect and they turned out amazing! Thank you!

Lemon Tabouli

This was my first attempt at tabouli and I think it turned out great! I left out the parsley and just added more mint. I also used less than 4 cups for a water and it still took longer than 30 minutes to soak it up. Beware, this makes A LOT! I've been eating leftovers for lunch all week. If you're not absolutely crazy about lemon, cut it back a bit, as it turns out VERY lemony.

Spicy Garlic Lime Chicken

Excellent recipe! I left out the cayenne and the parsley because I didn't have them, and added lime zest to the spice mixture. I only used one lime, so I don't think it made 3 T of juice, but the zest made up for it. I also used 6 chicken tender strips rather than the breasts (I was only cooking for 2 people) - I don't think the spice mixture would have been enough to coat 4 breasts though. Turned out great and was very easy! I served with Lemon Tabouli and white wine.
