Roasted Beets and Sauteed Beet Greens

Reviewed: May 12, 2008
I saw beets at the Farmers Market and bought them. I found this recipe and tried it due to the positive reviews! I can only say that the roasted beets are absolutely delicious. I have made this recipe twice now. Roasting time for beets definitely depends on the size. For those who have never tried fresh beets...give them a try! Well worth the roasting time!

Grilled Gulf Shark

Reviewed: Mar. 26, 2011
I have made this recipe twice. Both times, I soaked the shark filet in milk for at least 10 minutes..then, I have drained, patted dry and baked with squeezed lemon juice and pepper. It is fast and tasty.

Amazing Pork Tenderloin in the Slow Cooker

Reviewed: May 29, 2012
This recipe is delicious! My meat was pork loin roast versus Tenderloin. I followed the advice of several reviewers to reduce the sodium and step up the healthy eating. I minced up onions in lieu of the soup packet, and used homemade chicken broth instead of water. Also, I used 1.5 T of Soy sauce and 1.5 T of Worchestire Sauce. This is an easy delicious meal that goes well with mashed potatoes or baked potatoes. I also made the drippings into gravy! Try this for an excellent meal worthy of company!

Roasted Chickpeas

Reviewed: Nov. 9, 2012
These are fabulous! They just came out of the oven and I have to make myself stop munching!!! I had some chickpeas in the fridge that I had recently cooked and I did not want them to go to waste. So I dried them off while I preheated the over to 400. I roasted them dry for 30 minutes and was certain to shake them arond every 10 minutes. After the 30 minutes were up, I took the chickpeas out, sprayed them with e.v.o. in my mister, added garlic powder, cayenne and salt and put them back in for 10 minutes! These are wonderful! Thank you for posting!

Corn Tortilla Chips

Reviewed: Mar. 21, 2011
I had some leftover corn tortillas that were not used with my enchiladas...and did not want them to go to waste. I cut them into eighths, sprayed 'em with olive oil, salted and baked! Very easy and delicious. I will be making this over and over again! This is tons healthier than a bag of chips!

Alaska Salmon Bake with Pecan Crunch Coating

Reviewed: Nov. 8, 2010
This recipe is always a winner. If you have the fish cut into individual servings; it will not only taste delicious but look extremely appetizing as well. I have made this recipe twice....once with dried bread crumbs and once with fresh. It came out wonderfully both times.

Easiest Peanut Butter Fudge

Reviewed: Dec. 23, 2006
I was really looking forward to some delicious peanut butter fudge. It is extremely sweet with very little peanut butter flavor and the consistency is flaky or gritty rather than smooth. I do not recommend this recipe.

Creamy Pumpkin Pie

Reviewed: Dec. 1, 2006
I followed the recommendations of some of the other reviewers....and doubled all the spices and then used two pie shells, which were actually Marie Callendar frozen crusts. All I can say is that the pies were delicious. They had a fresh wonderful texture and I recommend the recipe to anyone using fresh pumpkin. My family loved it.

Sugar Cookie Icing

Reviewed: Feb. 15, 2006
This recipe did not disappoint. My valentine cookies were bright red with a shiny gloss! They defnitely looked store-bought. The taste was also wonderful. I may try the other tips left by others to try 1/4 t of lemon, vanilla and almond....but truthfully, the recipe was wonderful "as-is"

Mom's Zucchini Bread

Reviewed: Oct. 28, 2012
I have made this recipe twice and no longer feel a need to review zucchini bread recipes. This is delicious and moist. As was recommended by some other users I reduced sugar to 2 cups and found it really was perfectly sweet. This is a keeper!

Baked Teriyaki Chicken

Reviewed: Mar. 13, 2011
I used this recipe using 6 boneless, skinless chicken thighs. Per the recommendation of some other reviewers I did change it a little. I added 1 t of honey, a dash of worcestire sauce (sp?) and a sprinkle of chili flakes for a kick. This sauce was delicious even before I made the modifications. I highly recommend it and will make it again. We had this dish with broccoli and jasmine rice. Highly recommend.

Famous Japanese Restaurant-Style Salad Dressing

Reviewed: Mar. 13, 2011
I loved this recipe. I did overdo the onion a bit by failing to measure and used olive oil instead of peanut as it was all I had on hand... and tit was still delicious. This is a wonderful, fresh-tasting dressing. I will make it again and again.

Espinacas con Garbanzos (Spinach with Garbanzo Beans)

Reviewed: Mar. 13, 2011
I made my garganzos in the crockpot and they were wonderful. I then made this recipe with frozen spinach and found it to be very tasty. Next time I will use fresh spinach. This is perfect for any vegan looking to add protein into their meals.

Holly's Hummus

Reviewed: Mar. 7, 2011
I made this recipe to go alongside a Mediterranean stew w pita bread. It was easy and delicious. I found it to be a lighter version of store bought or restaurant hummus. I will definitely make it again!

Yule Log

Reviewed: Dec. 19, 2010
I am giving this a 3 star rating although I am going to try making it again to see if I raise the rating. The cake itself turned out fine. I rolled in a damp towel and let it cool...nothing cracked. The filling is where my problems began. I follwed the recommendation of another review and doubled the filling recipe so that I would be certain to have enough. The flour/milk mixture had thickened....but I do not think I let it cool down completely...so when I added it to the butter, omg, it looked lumpy and gruel-like and i thought Oh no! The same thing is happening to me. I said a quick prayer and got the idea of putting it in the freezer so that it could rethicken...then I beat it with a handmixer and it turned a lot more creamy. By the time I filled the cake....I had spent so much time that I did not have time to make the frosting. So, I used a can of chocolate store-bought frosting on it....and it was a "Save." Guests did comment that it was very good and not too sweet. I will post a new review after retrying it.

Sam's Famous Carrot Cake

Reviewed: Oct. 12, 2008
I made this cake yesterday for my husband's 47th birthday. Carrot cake is his favorite...and I decided to try and make it myself. This recipe was wonderful and simple to make. I did make the recipe exactly as instructed except I used a little less raisins. For the icing, I followed a tip of a previous reviewer who gave an easy cream cheese recipe that really has the cream cheese taste and not the sugary frosting taste. Very, very good. Thanks to your Uncle Sam for a new family tradition.

Brandied Orange and Cranberry Sauce

Reviewed: Dec. 4, 2006
My sister and I whipped this recipe up the night before Thanksgiving and it was a winner. My taste rating is a 4 star because I thought it was just a little off, but everyone liked it so well...that I couldn't bring myself to give it a lower rating. We did have to zest the orange using a grater as I could not find my zester. Anyway, you won't miss with this recipe.

I whipped this up according to the recipe posted using some freshly cooked garbanzo beans. I had everything in the pantry and it is a wonderful tasting hummus! I'm sure I'll make this again and again.
