Alaska Salmon Bake with Pecan Crunch Coating

Reviewed: Nov. 8, 2010
This recipe is always a winner. If you have the fish cut into individual servings; it will not only taste delicious but look extremely appetizing as well. I have made this recipe twice....once with dried bread crumbs and once with fresh. It came out wonderfully both times.

Orange Roughy with Montreal Salsa

Reviewed: Nov. 8, 2010
This montreal salsa is so delicious, it's hard to believe it's so easy. I have used it on cod, as well as mahi mahi. I have done as other reviewers and at times add bread crumbs or parmesan to change it up....but it's always a winner.

Chocolate Frozen Yogurt

Reviewed: Nov. 7, 2010
I made this recipe adding in 1 heaping teaspoon of Dutch Chocolate. I thought it tasted, odd...tart, grainy and too rich. I made this as a substitute for ice cream at a party and no one really liked it. I will not make it again.

Sam's Famous Carrot Cake

Reviewed: Oct. 12, 2008
I made this cake yesterday for my husband's 47th birthday. Carrot cake is his favorite...and I decided to try and make it myself. This recipe was wonderful and simple to make. I did make the recipe exactly as instructed except I used a little less raisins. For the icing, I followed a tip of a previous reviewer who gave an easy cream cheese recipe that really has the cream cheese taste and not the sugary frosting taste. Very, very good. Thanks to your Uncle Sam for a new family tradition.

I've made this a couple times now...and it works with fresh or bottled juices! Easy, and light....for a nice, tasty, healthy meal.

Roasted Beets and Sauteed Beet Greens

Reviewed: May 12, 2008
I saw beets at the Farmers Market and bought them. I found this recipe and tried it due to the positive reviews! I can only say that the roasted beets are absolutely delicious. I have made this recipe twice now. Roasting time for beets definitely depends on the size. For those who have never tried fresh beets...give them a try! Well worth the roasting time!

Brazilian Black Bean Soup

Reviewed: May 5, 2008
I have now made this recipe several times and like to make a small batch for a healthy, high fiber meal. I usually only use 1/2 cup of orange juice. I have also made it substituting chicken broth....but like the tang of the oj. This is not the prettiest soup, which is why it is not a 5...I always puree the whole batch, serve it with a dollop of sourcream and a bit of chopped red pepper. This recipe is a winner for people who like black bean soup!!!

Easiest Peanut Butter Fudge

Reviewed: Dec. 23, 2006
I was really looking forward to some delicious peanut butter fudge. It is extremely sweet with very little peanut butter flavor and the consistency is flaky or gritty rather than smooth. I do not recommend this recipe.

Brandied Orange and Cranberry Sauce

Reviewed: Dec. 4, 2006
My sister and I whipped this recipe up the night before Thanksgiving and it was a winner. My taste rating is a 4 star because I thought it was just a little off, but everyone liked it so well...that I couldn't bring myself to give it a lower rating. We did have to zest the orange using a grater as I could not find my zester. Anyway, you won't miss with this recipe.

Creamy Pumpkin Pie

Reviewed: Dec. 1, 2006
I followed the recommendations of some of the other reviewers....and doubled all the spices and then used two pie shells, which were actually Marie Callendar frozen crusts. All I can say is that the pies were delicious. They had a fresh wonderful texture and I recommend the recipe to anyone using fresh pumpkin. My family loved it.

Sugar Cookie Icing

Reviewed: Feb. 15, 2006
This recipe did not disappoint. My valentine cookies were bright red with a shiny gloss! They defnitely looked store-bought. The taste was also wonderful. I may try the other tips left by others to try 1/4 t of lemon, vanilla and almond....but truthfully, the recipe was wonderful "as-is"

Cioppino

Reviewed: Oct. 18, 2005
My husband loves cioppino and always orders it if its on the menu. I made this for a dinner party of about 8 adults. Everyone loved it. I had to make a few changes....I didn't add mussels because of allergy, I used the shrimp with their shells, I put in 2 lbs. crab legs and added the clam juice recommended by other reviewers. Also, I threw it a couple of extra tomatoes because my taste was a little bland. Overall, everyone loved it including me and this is a dish I never order. Highly recommend it! Thanks to original submitter.

Simple Scones

This recipe is so easy to prepare and tastes delicious. The scones were the absolute rave at a babyshower/teaparty we had for our cousin. Cannot recommend them highly enough. Why buy scones when these are so great!!!
