Real Hummus

I whipped this up according to the recipe posted using some freshly cooked garbanzo beans. I had everything in the pantry and it is a wonderful tasting hummus! I'm sure I'll make this again and again.

Lentil Soup with Lemon

I made this recipe and LOVED IT. It is just the right balance of flavor and such a healthy meal. I used homemade chicken stock...and then followed the recipe adjusting the flavor a little to taste for chili powder and cumin. I highly recommend this soup!

Best Butternut Squash Soup Ever

Following the advice of another cook, I roasted the butternut squash in the oven for about an hour at 400 and just poked holes in it. After it was roasted, I sliced it in half lengthwise, removed the seeds and cubed the squash. I let it cool and refrigerated it. The next day, I used my already cooked and cubed squash in the recipe and followed the recipe using homemade chicken stock rather than canned broth. This recipe was just right for a nice healthy soup that is filling and tasty!!! Thanks for sharing! I did use the whole butternut squash as I like my soup a little thicker!

Slow Cooker Split Pea Sausage Soup

I had a hankering for split pea soup and used the above recipe for my crockpot. I had a hamsteak with a bone which I chopped up and used about a cup full in the recipe. I used homemade chicken broth instead of bouillon cubes because I had it on hand. After turning the crockpot off, I took out the bayleaf, and let it cool down and placed in the fridge. The next day I pureed it in the blender. This split pea soup is very very good! Thanks for the recipe!

Roasted Chickpeas

These are fabulous! They just came out of the oven and I have to make myself stop munching!!! I had some chickpeas in the fridge that I had recently cooked and I did not want them to go to waste. So I dried them off while I preheated the over to 400. I roasted them dry for 30 minutes and was certain to shake them arond every 10 minutes. After the 30 minutes were up, I took the chickpeas out, sprayed them with e.v.o. in my mister, added garlic powder, cayenne and salt and put them back in for 10 minutes! These are wonderful! Chocolate Cornstarch Pudding

I whipped this up exactly as described in the recipe. My son and I enjoyed the pudding warm the first night and my son ate the leftovers the next day cold out of the fridge. I will never buy boxed pudding again! This is tasty, cream and preservative-free!!!

Mom's Zucchini Bread

I have made this recipe twice and no longer feel a need to review zucchini bread recipes. This is delicious and moist. As was recommended by some other users I reduced sugar to 2 cups and found it really was perfectly sweet. This is a keeper!

Tuna and Chickpea Salad

I made this recipe after I just finished making a batch of fresh garbanzo beans in my slow cooker. I did not have Italian tuna, however, I followed the advice of other reviewers and used a T of olive oil and added it to water-packed albacore. I also substituted spinach for flat-leaf parsley and yellow onion for red as I had none on hand. This recipe is delicious! I can hardly wait to make it using the original ingredients! Well worth making!

Amazing Pork Tenderloin in the Slow Cooker

This recipe is delicious! My meat was pork loin roast versus Tenderloin. I followed the advice of several reviewers to reduce the sodium and step up the healthy eating. I minced up onions in lieu of the soup packet, and used homemade chicken broth instead of water. Also, I used 1.5 T of Soy sauce and 1.5 T of Worchestire Sauce. This is an easy delicious meal that goes well with mashed potatoes or baked potatoes. I also made the drippings into gravy! Try this for an excellent meal worthy of company!

Traditional Mashed Potatoes

These mashed potatoes were excellent. I doubled milk and butter because it was Thanksgiving, but next time...I will stick to healthier percentages. I whipped these rather than mashing and they were a sensation!

Grilled Gulf Shark

I have made this recipe twice. Both times, I soaked the shark filet in milk for at least 10 minutes..then, I have drained, patted dry and baked with squeezed lemon juice and pepper. It is fast and tasty.

Corn Tortilla Chips

I had some leftover corn tortillas that were not used with my enchiladas...and did not want them to go to waste. I cut them into eighths, sprayed 'em with olive oil, salted and baked! Very easy and delicious. I will be making this over and over again! This is tons healthier than a bag of chips!

Baked Teriyaki Chicken

I used this recipe using 6 boneless, skinless chicken thighs. Per the recommendation of some other reviewers I did change it a little. I added 1 t of honey, a dash of worcestire sauce (sp?) and a sprinkle of chili flakes for a kick. This sauce was delicious even before I made the modifications. I highly recommend it and will make it again. We had this dish with broccoli and jasmine rice. Highly recommend.

Famous Japanese Restaurant-Style Salad Dressing

I loved this recipe. I did overdo the onion a bit by failing to measure and used olive oil instead of peanut as it was all I had on hand... and tit was still delicious. This is a wonderful, fresh-tasting dressing. I will make it again and again.

Espinacas con Garbanzos (Spinach with Garbanzo Beans)

I made my garganzos in the crockpot and they were wonderful. I then made this recipe with frozen spinach and found it to be very tasty. Next time I will use fresh spinach. This is perfect for any vegan looking to add protein into their meals.

Flounder Mediterranean

This is an excellent tasty recipe. I have made it twice. Both times I used canned diced tomatoes...one time I used black olives because that's all I had in the pantry...the next time I used green olives with capers. I used a little less olives and capers per the recommendations of other reviewers. I will definitely make it again. We have used it on Flounder, Tilapia...and I have used leftover sauce over a baked potato. A winner each and every time!

I am giving this a 3 star rating although I am going to try making it again to see if I raise the rating. The cake itself turned out fine. I rolled in a damp towel and let it cool...nothing cracked. The filling is where my problems began. I follwed the recommendation of another review and doubled the filling recipe so that I would be certain to have enough. The flour/milk mixture had thickened....but I do not think I let it cool down completely...so when I added it to the butter, omg, it looked lumpy and gruel-like and i thought Oh no! The same thing is happening to me. I said a quick prayer and got the idea of putting it in the freezer so that it could rethicken...then I beat it with a handmixer and it turned a lot more creamy. By the time I filled the cake....I had spent so much time that I did not have time to make the frosting. So, I used a can of chocolate store-bought frosting on it....and it was a "Save." Guests did comment that it was very good and not too sweet. I will post a new review after retrying it.
