Beef Bourguignon II

Wonderful, Wonderful!!!! This was a great recipe! I have never made this type of dish before and it turned out great! I used a London broil as my meat; it was a very nice cut I might add! I did not use fresh parsley, all I had on had was dried, but it didn't matter, it was still great! I have put this in my personal cookbook! I just want to add to anyone who wants to try this, please remember this and make it a rule of thumb, my mother always told me, never cook with a wine that you wouldn't drink, because when the alcohol cooks off, all you have left is the flavor, so please, make sure you use a good wine. I recommend CK Mondavi Cabernet Sauvignon. It is a great wine and reasonably priced.

Burrito Pie

Since there are so many reviews to this recipie, I do not know if this was mentioned. When I made mine and instead of the 4 quart casserole pan, I used two 9 inch cake pans. I am only cooking for two so I froze the other. This was so very good! My husband, a tex/mex food fan, loved it (he added his favorite hot sauce to it since he loves extra extra heat)! No alterations need to be added to this. The ingreidents weren't hard to find and very inexpensive. Preparation was so easy! I served it with tortilla chips, sour cream and salsa. It's a good weekend or Friday night dish.

Mom's Apple Pie I

I made this pie for my father-in-law for his birthday and he hasn't left me alone since! This is a great pie. I did not have whiskey so I subsituted it with Vanilla Extract and it came out wonderful!!! I did a Lattice top as well and it also turned out great!! It is so easy to make and so wonderful! :)!!!!!

Cranberry Pork Roast

Okay, I have two reviews...kind of...one, before I prepared this I gave it to my mother who a)cooked it in the oven w/ foil, b)Made it with whole cranberries and c)used 1/4 cup of sugar. She had 6 guests over and they all loved it and begged for the recipe! I made it today in my slow cooker with jellied and a little over a fourth of sugar and it was tender and amazing! I cooked it on low for 5 and a half hours and it was done(meat thermometer registered at 170). I was incredible and very man friendly! So two points here, if you don't have a slow cooker it is still great in the oven and if you don't have jellied, whole will suffice! Oh and also, to skim fat a paper towel does the trick!

Zesty Porcupine Meatballs

"Nummy Nummy!" Said my 18 month old after eating this treat! It came out great, I added garlic powder. Also I had a half of green, red and yellow pepper left over from a pasta salad I made so I tossed them in and they added great flavor and color! But nothing really needs to be changed. So easy to make! My mother used to make this when I was a child, but I don't remeber it being nearly as good. A real kid pleaser!

Savory Diet Chicken

This was good, but the chicken comes out too dry, I would suggest marinating in a fat free salad dressing or applying a rub before hand. The veggies were tasty, I used baby carrots and they came out tender with the right amout of Worchestire taste. And I added fat free sour cream to my potatos and topped it with the onions.

Baked Pork Chops I

I am sorry, I must be in the extreme minority when I say this was awful! I read the reviews and took note of any modifications, etc. but this recipe is beyond help. I tasted like a Campbell's soup recipe, despite the claims that it did not. My husband and only ate our sides. I am going to stick with recipes that use fresher ingredients as opposed to processed ones, based on the number of positive reviews I thought I would give it a whirl. This recipe is nothing special and not one fresh ingredient, but the meat, goes into this. The flavor of the sauce is very generic and again, processed. I felt like at some point I should have added Velveeta. If you like cream of whatever soup recipes, I suppose you will enjoy this. However, if you enjoy entrees of a fresher fare, keep looking!

Daria's Slow Cooker Beef Stroganoff

We really enjoyed this! I used a too thick leftover london broil that rufused to cook (completely raw in the middle) on the grill the night before at was a little over 1.5 lbs and it had been slathered in A-1 and Canadian Seasoning. I leiu of canned I opted for 8 oz fresh Baby Bella (Cimini) Mushrooms, which I added from the start and they held up wonderfully. Also gave it much more garlic than called for (we're garlic lovers) and added Seasoned Salt as per other reviewrs suggestions that it came out under seasoned. I used a fat free sour cream at the end to kick a wee bit of the fat content out and we enjoyed it over egg noodles. The worst part about this recipe is having to smell it and drool until dinner time! : ) Served with a fresh whole wheat bread from the bakery. Will definitly make again!

Mom's Zucchini Bread

This was very good! To lower the fat and calorie content, I subistuted the 3 eggs for 5 egg whites and the cup on oil for unsweetened applesauce (if you do this, do not over stir). Also, my neighbor had given me half a bushel of summer squash, so I used that in lieu of zucchini. It turned out wonderful! This is a keeper!

Chicken and Red Wine Sauce

First, I scaled this to 3 servings and used boneless skinless chicken. I added extra garlic and also threw in a Vidalia onion. I browned the chicken, not fully cooked though. I then added my brown sugar, halving as I tasted my wine, a cabernet, as it was a somewhat sweeter wine. I cooked it as directed for 5 minutes and lowered it and added fresh, sliced Baby Bellas. Covered and finished cooking. Came out moist and delicious! I aroma is just to die for! Served with plain ol' mashed potatoes and green beans. Will make again! Oh, and if you use a bad wine it will turn out bad...it's the golden rule with cooking...never cook with a wine you won't drink, because when the alcohol cooks off, all you are left with is the flavor!

4H Banana Bread

This deserves 5 stars! I was looking for an easy banana bread recipe and I looked at the more higher rated ones on this site. I saw far too many bad reviews in those and some that required more work than I felt like for a simple bread. The simplicity of this recipe appealed to me and I am glad I used it. It came out wonderful and I am not a big Banana Bread fan! I followed it to the tee just adding a VERY heaping cup full of bananas and some cinnamon. EVEN BETTER the next day. I will note though, it took a full hour in my oven (which is only a year old) and it was still a bit gooey in the center. So I turned the oven off and left it in the oven for about 15 minutes and it yeilded perfect results! I will keep this recipe for good. Thank you for sharing Pat.

Easy Beef Strogonoff

Very good, used thin sirloin steak cut into strips ans cooking in Garlic Flavored Pam. AMAZING! My husband loved it! DEFINITLY a do again! Will reccomend to friends and family!

Award Winning Chili

This should have won first place! The overall flavor of this chili is outstanding!!! My husband who is a heat freak, likes a spicer chili but REALLY enjoyed the favor of this chili. I used my slow cooker for this and it turned out fantastic! Even without cilantro this is so very colorful. The only thing I did different was added celery seed rather then the celery. After it was all together I realized I neglected to add the acctual celery, so I added the seed, which I like better since it was already chunky enough with the other veggies. Oh, and I added northern white beans since I hate kidney beans.

Angel Chicken Pasta

This was good! I made it for my dinner guests and they liked it. I doubled the recipe and used cream of mushroom soup and only one packet of italian seasoning due to the reviews. I also added fresh mushrooms. The wine gave it great flavor. Oh and just to add...my dog liked it!

Awesome Slow Cooker Pot Roast

Oh this was soooo good, I used an irregular sholder cut of london broil and added carrots and potatos.....MMMMMMMMM!!!! I loved every last bit that I sopped up with my buttered bread! I was very easy and you can just throw it on all day and forget about it...or until the aroma drives you crazy! I work nights so I keep my family fed with the crock pot. It's wonderful!

Caramelized-Onion, Spinach, and Bacon Quiche

I made this this evening and while it was very tasty, I had a very hard time with the pizza dough resulting in a very chewy crust. Also my amateur attepmt at preparing the dough called for a thick mess that tore and did not fit the pan allowing a good amount of excess liquid to spill on to the counter and drip onto the floor (the dog didn't mind!) I will use the prepared crust (thus negating the light concept) in the future to make this a truely easy quiche. My husband and I both love this and for 5 points per slice, it's a keeper! : )

Thanksgiving Meatloaf

Lower the fat in this tasty dish by using 3 egg whites and water. Add any extras to give more flavor, I add onions and garlic (a friend of mine adds peppers). This is a great 2 point per serving for those on Weight Watchers when prepared as mentioned above. My picky (and I do mean picky) toddler absolutly adores this! Very easy to make too! Sometimes to give the more tradional meatlaof appearence, I add tomato sauce. Not necessary, but tasty nonetheless!

Biscotti Toscani

This turned out very well! I admit for some reson mking biscotti was a bit intimidating, but all in all it was quite easy to make. The ingredients were basic. I didn't use oragne zest only becasue I didn't have an orage on hand, but it didn't need it anyhow. I will try it next time, but it still tastes fine without it. These were very tasty amd I will make hem again!
