Mrs. Sigg's Peanut Butter Cookies

Great cookies. The only substitution I made was to use regular shortening because I didn't have butter flavor. They were wonderful and cooked up nicely.

Chicken Enchilada Casserole II

Our family of 6 loved this recipe. I used lite sour cream and low-fat cream of chicken soup. It worked wonderfully. I also used boneless, skinless chicken breasts and some of my homemade taco seasoning while they were cooking. Loved it!

Good Old Fashioned Pancakes

I didn't change a thing with this recipe. I only took care to let my eggs and milk come to room temperature and incorporate the wet and dry ingredients separately before mixing them together gently. They were wonderful! My 7 year old and 5 year old helped out with the recipe and we all enjoyed a lovely breakfast! Thanks!
