Kelsey's Favorite Stuffed Green Peppers

Delicious! Used Zattarans Dirty Rice instead of white rice. Added garlic, garlic salt and cumin. Added a can of diced tomatoes. Used ground turkey instead of beef. Totally skipped boiling the peppers and just stuffed them and baked them covered for 20 minutes and uncovered for 20 minutes. Perfection!

Mile-High Apple Pie

FANTASTIC Pie recipe! I used two granny smith, two golden delicious and 2 Fuji apples to give the pie a little more taste and texture and I was pleased with the way it came out. Used corn starch as that's what I had on hand and it didn't seem to make any difference, still came out nice and juicy, yet not soupy. I also added walnuts in with the sugar mixture and the husband loved it.

World's Best Lasagna

It truly is the World's Best. Used ground turkey and turkey breakfast sausage instead of ground beef and Italian sausage. Totally worth the extra time.

Slow Cooker Chicken Taco Soup

Delicious! I didn't have the full 7 hours, so I put the slow cooker on high and after 3.5 hours I shredded the chicken and let it cook on high for another hour. The husband loved it and it will go in our regular winter soup rotation.

The Whole Jar of Peanut Butter Cookies

OMG these are fantastic! Fresh out of the oven they are melt-in-your-mouth delicious. I would agree it is better to under cook than to overcook these. A definite keeper. Thanks!

Balsamic-Glazed Salmon Fillets

Great recipe! I marinated the salmon for about 20 minutes before baking. It only took about 10 minutes to cook, any longer and it would have been dry. B/f loved it so much he went back for seconds and thirds : ) Thanks for a great recipe!

Baked Pesto Chicken

Delicious and easy to make. I poked holes in the chicken with a fork and then allowed it to marinate in the pesto a few hours. Added more pesto to the top of the chicken immediately before baking and baked covered about 20 minutes. I used a 3 cheese Itallian blend and put fresh basil under the tomatoes and more cheese on top of the tomatoes, then baked 5 more minutes. This recipe is boyfriend approved :)

Mexican Baked Fish

Delicious, simple and fairly healthy dinner to make with only a few ingredients. I used Tilapia and added a little tomato juice (2 Tbs. or so) to the baking dish to keep it from drying out. Used some black bean salsa I had on hand, tossed a little shredded cheese on top, popped it in the oven and VOILA! I left out the corn chips and sour cream as we don't care for either ingredient, then garnished with cilantro and the husband insisted on seconds.

Balsamic Chicken and Fresh Mozzarella

Wow! Excellent recipe. I added garlic and dried basil to the marinade and then baked the chicken IN the marinade in the oven at 350 for about 40 minutes. During the last 5 minutes I added the cheese and basil and then about 2 minutes before it was done I added the tomato so everything was warm. B/F and I both LOVED it! Thanks for a great recipe.

Broiled Tilapia Parmesan

OH MY GOD! Excellent recipe! I made it exactly as is stated in the recipe and it turned out perfectly. Boyfriend loved it! Full of flavor and VERY easy to make. It's a keeper.

Seafood Cioppino

My boyfriend and I were looking to try something different, and this was excellent! Great flavor. The only part we didn't really care for was the cod. Next time we may try a different type of fish, or just use more shrimp in place of the fish.

Four Fruit Pie

This pie was awesome!! Great flavor, easy to make! I don't care for crumble topping, so I made a lattice crust to top the pie and mixed the pecans that are called for in the recipe in with the fruit filling. Wonderful! Will make over and over again!

Health Nut Blueberry Muffins

Bar none the BEST muffins I've ever made. Delicious. The recipe is so easy and so forgiving you can substitute ingredients and it still comes out great. Didn't have oat bran, so I added more quick oats. As others have suggested I substituted apple sauce for oil. I doubled the blueberries to 2 cups and added extra nuts. YUM!

Cheese Herb Bread

This was my first attempt at making bread, it turned out well, just a little bland for my tastes. I followed previous advice and only used 2 tsp of yeast, I also added garlic and fresh rosemary, and used olive oil instead of butter. Nice texture and crust, needs more flavour.

Apple Pie by Grandma Ople

The pie was pretty good. I did follow previous suggestions and coated the apples in sugar, cinnamon, all-spice, and nutmeg before pouring 3/4 of the liquid onto the apples and the other 1/4 onto the crust. The granny smith apples were a little tart for my taste, in the future I may try mixing the granny smith with macintosh.

Basic Flaky Pie Crust

This was the first pie crust I've ever attempted to make and it was surprisingly easy and came out nice and flaky. The dough needed more ice water than is called for, otherwise it's very dry and hard to work with. It also doesn't have much flavor using shortening. I may try using salted butter next time around.
