Health Nut Blueberry Muffins
Bar none the BEST muffins I've ever made. Delicious. The recipe is so easy and so forgiving you can substitute ingredients and it still comes out great. Didn't have oat bran, so I added more quick oats. As others have suggested I substituted apple sauce for oil. I doubled the blueberries to 2 cups and added extra nuts. YUM!

Kelsey's Favorite Stuffed Green Peppers
Delicious! Used Zattarans Dirty Rice instead of white rice. Added garlic, garlic salt and cumin. Added a can of diced tomatoes. Used ground turkey instead of beef. Totally skipped boiling the peppers and just stuffed them and baked them covered for 20 minutes and uncovered for 20 minutes. Perfection!

Mexican Baked Fish
Delicious, simple and fairly healthy dinner to make with only a few ingredients. I used Tilapia and added a little tomato juice (2 Tbs. or so) to the baking dish to keep it from drying out. Used some black bean salsa I had on hand, tossed a little shredded cheese on top, popped it in the oven and VOILA! I left out the corn chips and sour cream as we don't care for either ingredient, then garnished with cilantro and the husband insisted on seconds.
