Grilled Marinated Shrimp

Made this recipie with 1/2 of the oil replaced with spicy V-8 Juice to cut the calories a little and it was magnificent! My family loved this shrimp!

Beer Margaritas

WOW! I told my hubby about this recipie and he said no way! But I persisted using the good reviews as stategy until he relented. These were the best margaritas either of us has ever had...even in a bar. Two thumbs up!

Grandma's Famous Salmon Cakes

this recipie is delicious and since we are on a low carb, high protien diet it is right up our alley! Even our picky son who gets tired of the "diet" food love it. For "Rosie", try adding a tsp. or so of Old Bay to add that spice you are looking for. If you like things hot, try the Old Bay blackening spice instead! Hope this helps!

Amy's Cilantro Cream Sauce

wow...wow...ummmm...WOW! This recipie is phenomenal! What's even better than the taste is that it makes A LOT! I made this to compliment a mexican dish and it was great. However I had so much left over I devised a way to use the remainder later in the week. I spread it over tilapia filets and pan fried in olive oil...oh my was it good! The cilantro cut the fishy taste of the tilapia and the fish cut the strong cilantro taste for a perfect blending of flavors. In my opinion this sauce was even better as a sauce for fish than its original use. You just gotta try it! Thank you so much Amy for such a wonderful and versatile recipie!

Creamy Buttered Cucumbers

Great recipie except it was a little heavy on the salt. I will decrease it a little next time and I think they will be perfect. The cooked cucumbers were a suprisingly good new taste for us and the sauce was fantastic. I used 1/2 sour cream and 1/2 heavy cream as suggested...mmmmmm! Add plenty of dill as specified and this would also make a great sauce to accompany blackened salmon as well!

Spinach and Strawberry Salad

Totally Awesome Recipie!!! I made as directed except substituted Splenda for sugar, balsamic vinegar for white wine vinegar and walnuts for the sesame and poppy seeds (due to diet restrictions) and it turned out great! I can't believe how absolutely wonderful it tasted...For those of you who think this sounds like a weird combination of ingredients, you need to give this recipe a try...I'm so glad I did! I will be making this recipie a lot this summer!

All Protein Meatloaf

Since my husband and I are on the Herbalife diet plan I needed more protien and less calories. So, I made a few adjustments that boosted the protien to about 30 and lowered calories to around 300, as well as added a side dish. Use 1 lb. Ex.lean ground beef (93/7)and 1/2 lb. ground chicken. Replace eggs with 1/2 cup Southwestern egg beaters. Exchange plain porkskins for BBQ flavored and omit Chili powder. Replace garlic salt with fresh or jarred chopped garlic (helps reduce saltiness others complained about). Keep garlic pepper and add 1/2 tsp. Italian seasoning. I forgot the worchestershire and it was okay without it. Add about a 1/2 cup of finely choped onion. Mix well and form loaf. Put in retangular casserole dish. Bake as directed. About 20 minutes before meatloaf is finished remove from oven and add 2 cans french green beans and 1 can diced tomato around sides of loaf and coat top of loaf with a mixture of 1 sm. can tomato paste, 1 Tblsp. chilli sauce and 2 Tblsp. ketchup. Return to oven and finish baking. I recomend using a meat thermometer to make sure meat is thoroughly cooked. I served with a salad for a wonderful, tasty and healthy meal. My son didn't even know he was eating "diet" food, so everyone was happy. Thanks for a great recipie...this one is a keeper at our house!
