Easy Mini Quiches

I served these at a baby shower and have never had so many people ask me for a recipe! I followed other reviewers' advice and cut the Bisquick to 1/2 C and cheese to 1 C. Perfect! I made 3 variations: as listed (the best); spinach, artichoke and swiss/mozzarella cheese mix(very tasty); crab, onion & swiss (not horrible). Easily portable and sooo easy to make. Thank you!

Mexican Beef Supreme

My husband never comments on my cooking, but praised this dish over and over, and said he wanted it every night for dinner. I used ground beef because I couldn't find stew meat at the store. SO GOOD!! A little spicy, next time I will serve it with chopped tomatoes and sour cream to cool it down a bit. Yum!

Baby Blue Punch

I served this at a baby shower (it's a boy!) and it got rave reviews. Most were impressed by the color and commented on how creative it was. There wasn't a drop left! I only used about 1/4 - 1/3 cup of sugar, and it was plenty sweet. Also used low-fat ice cream, couldn't tell the difference!

Citrus Chicken

I was looking for something different, and this was it! I cut way back on the salt/pepper (1 tsp each - just right for me). Also cubed the chicken so it would cook faster. Left out the olives and otherwise followed exactly, and it was absolutely delicious! It will be added to my regular rotation. Thanks for sharing.

Spinach Chicken Parmesan

This was just ok. I agree that it was bland. If made again, I'd mix in 1 teaspoon of cayenne pepper with the parmesan for a little kick. I doubled the sauce and much of it ended up down the drain. Better the next day, though!!

Bourbon Pecan Chicken

Wow, this was really good! I wanted a healthier version so I baked instead of fried. I brushed each chicken breast with egg white, then rolled in the bread crumb/pecan mixture and omitted the butter. Baked at 375 for about 40-45 minutes. For the sauce, I only used about half of the butter called for. I was hoping for leftovers but it was so good we ate every last bite. Thanks!

Mexican Vegetable Pizza

I followed this recipe exactly, and felt like something was missing. I was excited about the healthy veggie aspect, but for flavor - found the cinnamon a bit overpowering. My husband complained that there was "too much stuff piled on top", making it hard to eat. If made again I would use canned refried beans instead of the puree, would cut the cinnamon in half, and would add more garlic and onion, while easing off the quantity of the other toppings. I will keep trying, as I think this recipe will be a good one that people can customize to their own personal tastes. Thank you for sharing!

Awesome Egg Salad with a Kick

This is the recipe I have been looking for - it's not your bland, boring egg salad. After reading reviews I questioned the bacon, but added it and am glad I did. I also upped the horseradish and red onions a bit, and served in onion pitas. My husband gave this a mid-mouthful "this is awesome!" - will definitely make again (maybe tonight!) Thanks!

Chicken and Lentils

I was looking for a good recipe using lentils, but this didn't do it for me. I followed the recipe exactly, but found the rosemary overpowering. I also agree with another reviewer that the sauce tastes better before adding the tomato sauce. Has potential, but I would tweak it a lot if we tried it again.

Barlow's Blackened Catfish

Excellent recipe, great flavor! I used olive oil spray instead of butter, and just enough light Italian dressing to cover the fish before baking, and served on a bun. Served with some dirty rice, will definitely make this again. Yum!

Crispy Sweet Onion Rings

Great onion ring flavor without all the grease! I had a lot of coating left over (only used 1 onion for 2 people), so I let the first cornflake coating dry a bit, then dipped and coated a second layer, then baked per directions. They were extra crispy and tasty! I would spray the cookie sheet with cooking spray before putting the onion rings on it...some of mine stuck. My husband asked for them again. Thanks!

White Chili

Very yummy and easy! I added corn so I could sneak in more veggies for my husband. These servings are pretty large, I made half a batch and that fed 2 people for 2 meals. Only 4 stars because the hubby said it could use a little more spice. I added 1/2 t of garlic salt as well. Even better the second day! Have fun with the toppings!

Quick Cajun Vegetables

Oh my goodness, it's a good thing this was healthy because I had three helpings! Made it with fresh picked sweet corn (two ears) and green beans from the garden. We skipped the mushrooms since we don't care for them - and I probably didn't use a full tablespoon of cajun seasoning, just eyeballed it. The HUSBAND (broccoli is a "vile weed") had three helpings. It's that good. Thank you!!

Grandma's Secret Pie Crust

Tortilla Soup II

Wonderful - I chose this recipe over the others because it is so much healthier. It is excellent! We love spicy food so I considered adding a little extra, but it was perfect as stated in the recipe. I added in some tortilla to the broth while cooking, gave it a little more substance and tasted great. I baked the tortilla strips as others suggested -- my husband has now claimed that they are his new favorite snack. Thanks for the great recipe!

Corn Chowder I

I used turkey bacon in an effort to reduce the fat. Cooked it extra extra crispy, but it produced no bacon grease for onion frying (improvised there), and once it was mixed with the soup, the bacon became very chewy. So I would recommend using regular bacon. Also, the soup was runny, so followed other reviewers suggestions and added masa flour, worked great. Wonderful flavor! Will try again.

Chicken Corn Chowder

We enjoyed this recipe. I made mine in the crockpot...used chicken straight out of the freezer, and added everything else except the cheese and green onions. I cooked on low for 8 hours. At 1/2 an hour left of cooking, I shredded the chicken and added the cheese and onions. At this point it was a little bland, so added a little cumin and onion salt. Very good and hearty for a cold night!

Pineapple Upside-Down Cake V

This was fantastic. I used a cherry chip cake mix that I had on hand, followed the directions on everything else - super yum! Hubby who turned his nose up at the idea of a "fruit cake" went back for (larger) seconds. The coconut/brown sugar mixture makes it. Thanks!

German Beef Rouladen

This was very tasty and easy to make. Next time I will try a different meat, pound it a little harder, or cook longer, as our steaks were pretty tough (used cube steak). I saw people adding pickles to the roll in a different recipe, so tried that as well -- used extra hot pickle sliced thin, gave it a nice kick! We'll try this again. Thank you!
