Southwestern Egg Rolls

YUM YUM YUM! I would make these at home in a heartbeat before ordering them at Chili's - they are even better!! I too used egg roll wrappers and subbed cilantro for the parsley - I LOVE cilantro! I doubled the recipe and got 15 good sized egg rolls. Served with Amy's Cilantro Cream Sauce as recommended - this will become a 'show' meal for when we have company. :)

Autumn Apple Salad II

Such a delicious refreshing salad. I used Pink Lady apples fresh from the orchard. Used walnuts rather than almonds b/c I had them and prefer them. Omitted cherries and added celery. I've had 3 huge bowls full in the past two days and my kids constantly beg for more. Forget those fruit salads that call for cream cheese, mayo, or added sugar... this one is the way to go. YUM!

Green Bean and Mushroom Medley

This recipe seemed so simple so I just threw it together for a quick side with dinner. It ended up being MY main course it was so yummy. My husband could not stop raving and my 3 year old loved it. A few modifications.. we don't like mushrooms so I left those out (and it was still delicious) and I was out of onion so I subbed a little onion powder. Took the butter down to 2 TBSP and did about 3/4 of a pound of green beans with baby carrots cut in half. I was simply amazed at the flavor. Can't wait to try it with real onion. I will use this again and again. YUM!

Mini Cheesecakes I

These were PERFECT! I used a regular sized muffin tin and got about 16 cheesecakes. I also used graham crackers for the crust. (only needed about 1 cup of crumbs) I made half of these regualr and half chocolate (with a chocolate graham cracker crust) by adding 3 oz of melted dark chocolate chips to half of the batter. They were so good I was afraid to try a regular one for fear of disappointment. But the regular ones were just as good. Baked about 17 minutes and then turned the oven off and left them in for another 30. No cracks and didn't fall at all. Topped with fresh sliced strawberries. They were a total hit and I will definitely make again!

Barbeque Pork Two Ways

yum yum yum yum! I LOVE me some bbq pork. I pulled the pork after it was cooked and then let it simmer in the sauce for another hour or so. I also did 1 cup of ketchup, 1 cup of bbq sauce (bulls eye) I just LOVE this recipe.

Sweet Potato Casserole II

I am not a huge fan of sweet potato casserole but after this I will be making it EVERY year for Thanksgiving. I did lower the sugar a tiny bit and used half white, half brown in the potatoes. This was gone in a flash, delicious!

Cream Cheese Penguins

absolutely adorable! I made these to use by the place settings at a dinner party. People could not stop talking about them. I used garden veggie cream cheese and a ziplock bag to pipe it into the olives. Very easy to make with an adorable result.

I used half sour cream and half mayo, added salt and pepper and only used one egg. The flavor of the suash was good but I was not crazy about the bread crumb topping. It seemed a little dry and didn't do much for the flavor.

Outrageous Chocolate Chip Cookies

We could not stop eating these cookies. I creamed the butters and sugars +vanilla and eggs before adding dry ingredients. I also lined my cookie sheet with parchment paper so I did not grease the pan. I used ghirardelli bittersweet dark chocolate baking chips and it was DELICIOUS! I will be making these again and again! ETA- This is now the only cookie recipe I use. I am now known for these cookies and I have given the recipe out dozens of times. I have a friend who says they are the only cookie worth eating. You MUST try them with the ghiradelli dark chocolate chips.

Black Bean Salsa

This recipe as is would only get 4 stars in my book, but with a few modifications it is definitely 5. I use all canned tomatoes, petite diced with jalapenos. I use shoepeg corn instead of mexican, then add the juice from one lime, salt and cumin. It makes such a huge amount but I have never had any leftovers. It's always a hit at the party.
