Mushroom and Spinach Ravioli with Chive Butter Sauce

Really delicious. This was worth the effort. My son, who isn't a big fan of cooked mushrooms, enjoyed these, too. I didn't make any changes to the recipe, but I cheated by using gyoza dumpling skins (next to the tofu in the grocery store) rather than making fresh pasta. Will definitely make these again. It made 3 adult dinner portions.

Restaurant Style Beef and Broccoli

Simple to prepare. The flavors blend well (I was worried my 12 year old wouldn't like the oyster sauce). We both agreed it was good and we'll eat it again. We served ours with simple sticky rice (Botan) and next time will probably try adding in some water chestnuts or other items. Another nice thing was that it was pretty fast to prep, marinate and cook!

Six Can Chicken Tortilla Soup

The only change that I recommend is using chicken breasts, boiled with seasonings and then shredded (or use a rotisserie chicken from the store). Great basic soup, makes enough for several adults. The toppings really are what make this great. I serve mine with sour cream, shredded cheddar cheese and crumbled tortilla chips.

Biscotti

I don't use the anise extract. Instead I use almond extract and add about 1-2 tablespoons of anise seed. It is wonderful to see the seeds in the cookies and the almond flavor is wonderful. I melt semisweet baker's chocolate and dip one edge in after the cookies have completely cooled. They make a great gift.

Watermelon Summer Salad

I enjoyed this salad. It was very different though and left a couple of folks at my table saying HMMM. They didn't say they disliked it, but it was just such a different thing than they've ever eaten. I would like it again, but my guests may not.

Blue Cheese Ball

This was very tasty and I got many unsolicited compliments on it. It wasn't too strong on the blue cheese flavor, depending on how you feel about blue cheese, that may be a good thing.

Italian Sausage Soup

I make this dish pretty much according to the recipe and it is my son's favorite! The only thing that I add is some medium-small cooked pasta of some sort. I just boil it separately, drain and add in at the end of cooking. It makes the soup more of a meal. My son will actually eat all of the veggies (he'd usually balk at the tomatoes) and asks for this soup specifically. Filling and great for a cold day.

Tortilla Ham Pinwheels

This was very good. I did a variation using turkey, swiss and ranch dressing mix, and that version was more popular. I did receive feedback that people liked these better than other pinwheel sandwiches they've tried - better flavor that I would attribute to the dressing seasonings added. Definitely refrigerate 8 hours - overnight to make them stay together better.

Creamy Chicken and Wild Rice Soup

Very good! I couldn't find the exact size of the box of rice, but I used 3/4 of a box I bought. I added onion, celery, carrots and mushrooms and it made a big difference. It was creamy, tasty and rich. I used 6 Tbsp of butter and 1/2 cup flour and half & half instead of heavy cream. I served this with Harvarti on sourdough grilled cheese sandwiches and salad.

It's Chili by George!!

I love this recipe. I pretty much make it according to the directions. The only exception is that I omit the green bell pepper (my son doesn't like them). Otherwise, I make this as is and it's a big hit at my house. Serve with chopped yellow onion, green onions, sour cream, shredded cheddar, frito style chips. (The toppings make this great.)

Super-Delicious Zuppa Toscana

This soup was really good. I used kale like many other users did. I also used red potatoes instead of russets, because I wanted them to hold their shape a little better after they were sliced and cooked. Great flavor, a little spicy and really tasted like that popular chain restaurant's soup.

Deep-Dish Blackberry Pie

I made this according to the recipe, no changes. It was very good. The crust does tend to get too dark if you press it over the edge of the baking dish, so I would recommend only putting the lattice over the fruit.

Fluffy Whole Wheat Biscuits

Good biscuits. I made these just as the recipe instructed and they were good. Not quite as tall as the ones in the photo, about half as tall. They had a nice flavor and were great with butter and honey. Very quick, too, which was nice. Will make these again.

Beef Stew I

This stew was good, but not fabulous. I guess that there are a couple of things that I would change. I would probably add some red wine to add more depth to the flavors. I would recommend either using a sprig of rosemary or wrapping the herbs in a bouquet garni so that the dried rosemary leaves aren't floating in the soup. But a decent basic recipe.

Yellow Squash Casserole

This recipe is great. I use my sister's advice and add 1 slice of bacon (chopped) per squash used and cook them up with the onions. The rest of the dish is made as directed in the recipe. Deelish!
