Carrot Cake III

I made 3 small changes but can still give the original recipe 5 stars because my changes weren't significant - I used half unsweetened applesauce / half oil, half white / half brown sugar, and doubled the frosting recipe but only used 4 cups sugar total - the full amount would have been way too sweet. The extra frosting wasn't actually needed, but really, one can never have too much cream cheese frosting in the house. I did leave out pecans as the author mentioned doing in the intro, no one here likes them. Everyone loves this cake and my 9 year old has requested it as his new birthday cake choice!

Simple Whole Wheat Bread

I made this recipe many times using the recipe as written then started modifying it (so the 5 stars is for both the original recipe and my modifications). My modifications: 3 cups white flour, 3 tsp yeast, 1/3 cup honey, 3 cups water - add to mixer (kind of like a kitchenaid), let proof for 30 minutes, then add 1 T salt, 3 T butter, and 5 to 5 and 1/2 cups whole wheat flour. Let the mixer knead it for ~8 min, then put in a greased bowl for an hour into a warmed oven (heated to about 100F), the cut into 4 equal chunks and roll into loaf shapes, then they go into the smaller size loaf pans (I have big ones that I've tried to make the 3 loaves the recipe states and the loaves are just too big). Back into warmed oven for ~45 min then turn oven on to 350F for 25 minutes. Everyone loves this bread!

Cedar Plank-Grilled Salmon with Garlic, Lemon and Dill

Excellent! Even my teenagers loved it. Made exactly as the recipe says except I had dried dill instead of fresh on hand, so I used that. I also added lemon slices on top while it was cooking.

Big Kev's Texas Style Long Island Iced Tea

I thought this would be great for our backyard BBQ based on all good reviews. Made 3 gallons (big party) exactly as recipe states, used regular coke for the cola, but kept the coke separate so it didn't go flat. No one liked it at any rate of tea mix to cola. Had to dump in a bunch of sweet and sour and make it drinkable and still ended up with 2.5 gallons of wasted alcohol.

Best Bean Salad

I apparently hate bean salad. I made this recipe (never had bean salad before) and was about to throw it out and my sister stopped me. Her and her husband LOVED it. I make it regularly just for them :) So 5 stars from them!

Oven Fried Chicken III

Other than cooking at 375 for an hour and using legs/thighs, I followed the recipe exactly. Good flavor and the meat is very juicy, but all 4 of my kids disliked the "gritty" texture of the bread crumbs. I'm not sure if I did something wrong to make them not soften up?

Ranch Dressing II

I adore this ranch. I can't say good enough about it. SO GOOD!!! My kids love, and I mean LOVE, crab salad made with spiral noodles, imitation crab, broccoli and this recipe.

Asian Beef with Snow Peas

Only had powdered ginger and garlic on hand (mixed it into the soy sauce mix) and frozen sir fry veggies (and used pork instead of beef) and this turned out GREAT!

Baked Basil Fries

I used this as a place to start. I cooked them in a frying pan as my oven was full. I cut the potatoes using my ancient veg-o-matic. In the fry pan, I added oil, basil, some oregano and thyme, and chopped garlic, heated that up, then added the potatoes. Mixed the potatoes all around to coat then sprinkled Parmesan cheese all over, stirred again, lowered the heat and covered. Took about 12 minutes and they were perfect.

Fried Rice Restaurant Style

I'm still working on working this recipe to be "just right" but it's a good starting point. 2 cups water for 1 cups rice is too much though, I use a little bit over 1-3/4 cup water per cup of rice. Some sort of sauce in place of, or in addition to, the soy sauce is a must. I've been working with Oyster Sauce and it's getting close but still not quite right. It's good (I have to bring out my biggest metal mixing bowl usually reserved for feeding hoards of kids popcorn), but I want perfect.

Bumbleberry Pie II

I used what I had on hand - 4 cups apples, 2 cups rhubarb, 2 cups blackberries and 4 cups strawberries. I also used 4T cornstarch in place of the tapioca, and store bought pie crust to save time. I'm allergic to strawberries, but my whole family said this pie was perfect. Just the right sweet-tart combination and great flavor. Thanks!

Hamburger Vegetable Soup

As it's written, I would give it no stars because the onion soup mix has MSG in it, which gives me a wicked migraine! So I had to modify it a bit, but my husband and I give the resulting soup 5 stars. My kids are insane and didn't like it, which is weird (they aren't that picky). I doubled the recipe (6 of us), and used 2 lbs ground beef, 4 cups chicken and 4 cups beef broth, and 8 cups water, 2 T of dried minced onion and 2 tsp onion powder (which I mixed into the ground beef while it was browning), 4-8oz cans tomato sauce, 4 stalks celery, a bag of stir fry veggies (it's all I had), and tri-colored rotini pasta. Once it was cooked, we added lots of shredded cheese. It has an excellent flavor! I have no doubt the original recipe tastes good too, but I'm not going to risk a migraine to find out. I'm going to use "normal" veggies next time and see if they kids like it better (I doubt it'll change the flavor much, just look more normal to them!).

Playgroup Granola Bars

Excellent! I just made these, they are still warm. I'm out of wheat germ, so I omitted that. I used whole wheat flour, canola oil and golden raisins. I added applesauce, and maybe a 1/2 cup semi sweet chocolate chips. My very, very, VERY pick 4 year old, who has like 4 foods he eats, is eating these up! Next time, I will use 1/3-1/2 cup brown sugar, it's a little too sweet for me, but still very good!

Chocolate Covered Caramel Surprise Cookies

Instant keeper. I omitted the pecans, used 26 caramels (recipe made 26 cookies), slightly warmed and flattened and I was out of white chocolate chips so I used butterscotch. Very good!

Fresh Southern Peach Cobbler

I followed the recipe exactly except I used ascorbic acid (powdered Vitamin C, you can get it in the food preservation section of the grocery store) instead of lemon juice and this is so incredibly good!! Edit July 2011: So that review was in 2008. I printed this up yesterday not remembering I had made this before! This time, I found that 6 peaches + 1 cup blackberries required me to double everything and use a 9x13 glass pan. A lot of reviewers mention a cake like topping but I did not get that. It had a really nice crunch, and between myself and 2 teenagers, that 9x13 pan was gone in 4 hours. My diet suffered but my taste buds didn't mind a bit. LOVE this recipe!

Creamy Rice Pudding
