Pistachio Fluff Fruit Salad
This recipe is delicious and great for potlucks. But be aware that the serving sizes are extremely liberal. I adjusted this for 24 people through the allrecipe conversion and it made way way too much. I had expected 1/2 cup serving size per person, but it ended up being like 1 1/2 to 2 cups per person. I literally had to throw out 3/4 of what I made (I would have saved it, but the marshmallows melt and the texture changes.) Next time I will only double the recipe for 24 people. It would have been plenty.

Burrito Pie
This was amazing! My family loved it. I varied the recipe a bit for what I had in the pantry. I used red enchilada sauce instead of taco sauce, and did not add the tomatoes. It turned out wonderfully and was a hit. I'd like to add cilantro next time. This is a definite addition to the rotation.

Tater Tot Casserole
Total comfort food. My family loved it. I used lean ground turkey and reduced sodium mushroom soup. To make it a bit more convenient, I used already frozen diced onions. Was a bit healthier, super fast to whip up and delicious.
