Cranberry Pistachio Biscotti

these came out excellent! the only issue i had was shelling the pistachios. i did add more cranberries, but otherwise kept the recipe the same. froze them for a party this weekend and looking forward to rave reviews! =)

Apple Maple Crumble Pie

FABULOUS! i made this as a dessert for a dinner party and it was a huge hit. i cut back on the syrup to reduce the sweetness a bit, after reading the ratings from other people, and i also used the syrup made with splenda to cut back on calories and it was still fantastic.

Parmesan Spinach Balls

this is one of my favorite recipes. we have some vegetarians in our family, so i was trying to find a yummy alternative to meatballs. since i started making them, now not just the vegetarians eat them - everyone loves them! i also cut back on the breadcrumbs...and put fresh minced garlic in, and a dash or two of cayenne. it's wonderful!

This was delicious! There IS a lot of butter in the recipe, though. Beware of leftovers...the butter solidifies in the fridge!

I'm all about simplicity, and this recipe is so easy and comes out delicious every time. Just put the ingredients in a bag and shake, then bake in the oven. Delicious!

Curried Meatloaf

This recipe is UNBELIEVABLE! You don't need any sort of gravy with it, the flavors blend together so nicely, it's perfect by itself. Paired with a baked potato and some mixed veggies, it's a delicious dinner!

i made this recipe with ground turkey instead of beef, and it came out great! i did have leftover shells, though, so be prepared to squish them on the dish...or make something else with them!
