Strawberry Jam

What a fantastic and super easy recipe! I only had about 3 cups of mashed strawberries, so scaled my recipe back accordingly, to do 3/4 of it. That said, I did use less sugar than what 3/4 of the recipe would have been. Probably only used about 1 3/4 cups total, instead of the 3 cups called for based on having only 3 cups of the berries. I did the freezer test a few times, just kept stirring my pot on the rolling boil, for a good ten minutes at least. My recipe ended up yielding 6 mini jars (the 125ml size) which I sterilized in boiling water and sealed by turning upside down for about 5 minutes once filled (as indicated by some of the reviews). The consistency and flavour of my jam are great - certainly sweet enough, even with my reduction of sugar. Will use this recipe going forward hands down! Thanks :)

Yummy Honey Chicken Kabobs

These were excellent! Made them for a large family birthday over the weekend, marinated overnight and only did cubes of chicken (no veggies) as I made a few different salads and fresh cut veggies/dip to serve alongside. They were a hit with adults and kids and came out nice and tender and full of flavour! Will make again :)

Slow Cooker Texas Pulled Pork

This was excellent, and a hit! I made this along with Yummy Honey Chicken Kabobs over the weekend for a family birthday party and the pulled pork was gone in a flash! I used 2 pounds of pork tenderloin, so scaled back the recipe by half. Put it in my slow cooker the night before to cook and had the timer on for low for 8 hours. So tender! Turned it back onto the warm setting just before our company arrived and added a bit more BBQ sauce at that time. So yummy :)

Alicia's Aloo Gobi

Excellent with a ton of flavour! As many others commented, I scaled the cayenne WAY back, used only 1 teaspoon - I can't imagine what a full tablespoon would taste like, pretty sure it would completely overwhelm this recipe! I also used ground cumin as I didn't have any seeds and then only used about two thirds of the can of coconut milk and about one tablespoon of the garam masala at the end (also as other reviewers noted). Very yummy and great for leftovers :)

Party Pinwheels

These are super little snacks that everyone always loves! I have made these on a few occasions and the combinations are endless in terms of veggies, grated cheese and the tortillas themselves. I like using orange or yellow pepper and usually add some of my own dried seasonings to the cream cheese. YUMMY :)

Quinoa-Cranberry Salad with Pecans

This was a pretty good recipe, enjoyed the combination of ingredients and textures - nothing too overpowering in terms of flavours. Would make a nice compliment to many main dishes - which in my case was some baked tilapia and steamed carrots :)

Mini Cheesecakes III

Excellent and easy! Love the individual portion size of these and there's a nice hint of lemon, but nothing too overpowering. I topped each one with some organic morello cherry jam and a fancy chocolate decoration for a great addition to my Christmas dessert plate!

Pancakes I

These turned out great, I made this recipe for two 10 year old and one 8 year old boy and not a pancake left in sight! I did add some chocolate chips to the batter for them as a treat, but otherwise, made exactly as directed :)

Chocolate Pretzel Treats

Don't let the simplicity of this great recipe fool you - these cute little treats are always a hit and take very little time to prep! They are easily switched up with combinations and can be done in Christmas, Halloween, Easter colours etc! I have used various types of Hersey Kisses (striped ones, plain, etc) along with either M&M's or smarties - all with great results! I have even used mini rolo type chocolates instead of the kisses. Love this one :)

Spaghetti Squash I

This was a great way to prepare spaghetti squash and turned out to be an excellent dish served alongside grilled salmon. I baked my squash in the oven for about 50 minutes and then left it to cool while I prepared the rest. Great thing is that you can really adapt this recipe to add/use up whatever veggies you want or have in your fridge! I sauteed some asparagus and mushrooms along with the tomatoes, garlic and onions. Didn't have any basil, so just left it out and served each plate with some feta and olives. Delicious!

Classic Dinner Rolls

Loved these rolls - they had a hint of sweetness to them. Excellent and quite easy. I don't buy rapid rise yeast, so used my traditional active dry and let it proof how I normally do. So nice to have fresh rolls with dinner every once in awhile!

Perfect Pulled Pork

Truly an excellent and 'perfect' pulled pork! This has a wonderful flavour, moist and very nicely spiced - we preferred it without any barbeque sauce at all. A repeat for sure - yummy!

Sun-Dried Tomato and Blue Cheese Burgers

These were very good burgers! I did scale the recipe back, using only 1 pound of ground turkey and swapped out the blue cheese for feta (hubbie doesn't like blue cheese)! I did soak my sun dried tomatoes for a bit first before chopping them up - very yummy :)

Italian Cookies II

I chose this recipe as I had 4 ounces of ricotta cheese to use and figured I would give these a whirl as they sounded unique! Texture reminds me a little of cake, and these have a very delicate, not too sweet flavour which would be complemented nicely by virtually any frosting you use. I opted to leave them as is, but would absolutely add the frosting when I made the next time!

Shrimp Quesadillas

Very yummy! I cut this recipe in half but decided to still use a full jalapeno and used a mixture of both chili powder and chipotle chili powder. Despite these being quesadillas and me knowing full well that they were, for some reason when I was finishing up and getting ready to serve this, I absentmindedly took the tortillas and added the filling to make them as 'wraps'...LOL. Totally not on purpose, but did not take away from the end result in flavour, which was great!

Aunt Cora's World's Greatest Cookies

Excellent cookies! My 3 boys devoured these in no time, almost as soon as they came out of the oven. I did reduce each the brown and white sugar to 3/4 cup each, as well as using all natural peanut butter instead of regular. I also used butter instead of margarine, which I also reduced by a bit, only because I was almost out (maybe closer to 3/4 cup). My chocolate chips were a mix of both semi sweet and peanut butter, YUMMY, not quite 2 full cups worth. Thanks Aunt Cora, these were some super yummy cookies!

Chickpea and Quinoa Salad with Lemon and Tahini

Excellent!! I LOVE lemon, tahini, quinoa, parsley and chickpeas, so this was fantastic to me! My husband and I both really enjoyed this, though I did add a bit of water to the dressing to thin it out a bit more. I also used canned chickpeas as I had them open already, maybe about a cup's worth! Yummy :)

Caramel Frosting I

This was an excellent frosting! My 5 yr old son requested chocolate cake with caramel and vanilla icing for his birthday cake! I made Black Magic Cake from here along with this frosting and Vanilla-Chocolate Powdered Sugar Frosting and they made a great combo! Just fyi, the amount of icing this makes 'barely' coated a 9x13 sheet cake and it does set up VERY quickly! Everyone loved it :)

Grilled Asian Chicken

Fantastic, super tasty and so easy using only 5 ingredients! I used this marinade for mini chicken skewers when we hosted a retirement/65th birthday party. It was a hit with the adults and kids! I cubed all of my chicken and then put in the marinade for almost 24 hours - YUMMY! I will use this one again NO doubt!
