Malaysian Mango Chicken Curry

We really like this recipe. It is easy, inexpensive and delicious so it has made the regular rotation in our house. I use a bit more curry because we like things spicy and frozen mangos which work fine.

Chuck's Favorite Mac and Cheese

Anything this good has to be sinful! I made it as written and it was delish. However, it was very, very rich compared to what I'm used to so on the second time I used 1/2 the bread crumb mixture, yogurt instead of sour cream, FF cottage cheese and added a few drops of liquid cayenne. Also yummy this way. I also let the dogs have a very tiny bit and they followed me around with love in their eyes for the rest of the day.

Baked Egg Rolls

I used my own filling but five stars for the idea of baking them. Crispy, not greasy! I prefer these to fried egg rolls.

Fish Tacos

This was great! Needing to reduce calories, I used a grilled Mahi Mahi, marinated in compatible spices. I also went 3/4 yogurt and 1/4 mayo. I was out of oregano, so just used Italian seasoning. We loved them and will add to a regular menu.

Maple Salmon

I made this but left out the garlic salt and used reduced sodium soy sauce. Instead of baking, I grilled on a cedar plank. This was some of the best salmon I've ever eaten. We'll try it baked in the winter, but the grilled was special.

Baked Fresh Cherry Pie

This was excellent. We liked it so well that I also made it with peaches leaving out the almond extract, using 1/2 cup each white and brown sugar and adding 1 tsp of cinnamon. It was also wonderful.

Amazing Brown Rice Salad
