Grilled Mahi Mahi

My husband and I made this on vacation and we LOVED it! Only change was less garlic. We cubed the fish and cooked it in foil packets on the grill. Even my 9 year old son loved it! Thanks.

Quick and Easy Alfredo Sauce

ok, I used 4 oz. of cream cheese b/c it's all I had left. Increased parmesan to 8+ oz. Also, sauteed 1 clove of minced garlic and 1 T. minced fresh onion in the butter before adding the cheeses. Seemed a little thin so made a slurry w/2 T. each of flour and butter which I whisked in to thicken b/c my intention was to serve over warm biscuits. Most importantly, I stirred in cooked carrots and broccoli and 3 cans of drained tuna. Guess you could call it Tuna Alfredo over biscuits! Delicious!

made exactly as written but added one 28 oz can of tomato sauce b/c I just wanted to stretch out the recipe....it was the best soup! Seriously, my family could not get enough of it.....

Stuffed Cubanelle Peppers

OK this was delicious but only b/c I tweeked it some. Cut the salts & black pepper in half but still a little salty. Only had 3/4 lb. of meat which was plenty. Also added 1 extra can of tomato sauce and small tomato paste. Also cooked rice in beef stock for added flavor but 20 min. is a bit long, rice was too soft but all in all came out awesome in the end!

Blueberry Zucchini Bread

I also did not have mini pans, used one fullsized metal nonstick pan and one loaf cooking stone. My metal pan finished in 50-55 min. and the stone one was ready in 55-60 min. Awesome recipe as is though. Thanks!

Used penne instead, 2 cans of stewed tomatoes chopped & drained, b/c it is what I had on hand. Also at least doubled the cream sauce and voila, my family loved this!!!!! My husband just keeps saying "YUM!" over and over........
