Farfalle and Tuna Casserole

Reviewed: Jul. 28, 2014
I wouldn't have thought to include sun-dried tomatoes in a tuna alfredo dish. It turns out it's delicious. This recipe is definitely worth repeating.

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

Reviewed: Jul. 27, 2014
This made a delicious salad. Next time I think I'll read up a bit on frying fish in The Joy of Cooking before I start. Following these instructions, the fish was frying very fast on the outside but not fast enough on the inside.

Spinach and Mushroom Egg Casserole

Reviewed: Jul. 4, 2014
This was good. I didn't like it quite as much as a leftover. Maybe because I microwaved it. Still worth making. Next time I'll just make what we need or heat up leftovers in the oven.

Cheesy Hash Brown Cups

Good and easy. I didn't have Italian sausage that day, but kielbasa worked nicely.

Jelly Doughnut Cupcakes

Reviewed: Jun. 13, 2014
These didn't send me "over the moon," but they were good, pretty, and easy. Also, I've been prescribed a gluten-free diet, and it was easy to make this gluten-free by substituting GF cake mix. I often find these cake mixes come out dry and grainy, but in the case of this recipe, I think the pudding moistened and smoothed out the batter nicely. I used the idea of some of the people who commented here, filling each cup 1/3 full with batter, scooping in a spoonful of preserves, and covering the preserves with more batter, filling the cup to about 2/3 full. I didn't have paper or foil baking cups that day, so I sprayed the cups of the pan liberally with cooking spray and then brushed the insides with vegetable oil. When the cupcakes were done, I flipped the pan and the cupcakes fell right out. This caused the preserves to break through the top of a few cupcakes, so next time I'll hold a baking sheet over the cupcake pan before flipping it, so the cupcakes don't have as far to fall.

Easy Red Beans and Rice

Easy and good. I spiced it up with chipotle pepper powder. Next time I'll cook the rice in the rice cooker.

Where's the Tuna Salad

Reviewed: Jun. 8, 2014
This tuna salad works great on sandwiches, with crackers, and in tuna melts. Really tasty with all of those flavors. I've made this recipe several times this summer already.

Tasty, but I'm going to try to modify it or find another recipe that is less sweet, European-style.

Chicken Souvlaki with Tzatziki Sauce

Reviewed: May 31, 2014
My husband and I both loved the chicken. He preferred to eat it without the sauce - he said he felt like it distracted from the already great flavors. I, however, loved it with the sauce.

Homemade Ginger Ale

Reviewed: Jul. 20, 2011
I didn't read all of the comments before trying this recipe, and when I followed the instructions exactly, the bottle exploded just over 24 hours into its 2 day wait time, making a loud noise and a huge mess. The bottle landed about 15 feet away from where it started. I imagine this could have hurt someone, but fortunately no one was near it at the time. I think some more details need to be included in the actual recipe itself. We shouldn't have to read all of the comments to learn that there is a risk of explosion. I don't fault the contributor of the recipe, though; I assume this simply did not happen to her or him.

Semolina Turmeric Cake (Sfoof)

Reviewed: Jun. 21, 2007
I made this for a dinner club party themed "Mushrooms and Turmeric." I was excited to find a recipe that actually fit the theme. It was good and served its purpose but was not one of my favorite desserts. I'd consider making it again for another "themed" meal.
