Pumpkin Curry Soup

Pretty tasty after I added more white pepper, nutmeg, cinnamon, allspice, cloves, onion powder, turmeric, and more curry. I cut the fat by using a tsp of olive oil to saute my garlic and onions instead of the butter and I used evaporated skim milk instead of regular evaporated milk. Will use this one again.

Delilah's Frosted Cut-Out Sugar Cookies

We like this recipe. Tonight my daughter made the cookies in a star shape to take to the VA Hospital tomorrow for Memorial Day. She wanted to frost the stars red, white, and blue. She made the frosting but it came out VERY grainy. We went over the recipe several times and finally she went to the store and bought pre-made frosting. We had an A-HA!! moment when we figured out that she had used regular sugar instead of powdered sugar. We've tried the frosting before and it is very good. Will use this recipe again. Cookies could use a bit of almond flavoring, frosting too, they are a bit bland. We used butter flavoring with the vanilla in the cookies.

Carrot Cake III

We've made this about 10 times now and it always gets compliments and requests for the recipe. We've made the frosting and tinted and used it to decorate. Works great in a decorating bag, too. I've used a finely chopped apple as a substitute for some of the oil and added more cinnamon, and about 1/4 tsp each nutmeg, allspice, and clove. Tastes better if you make the night before and then refrigerate. We used a 9 x 13 pyrex pan and it overflowed so now use 2 9" rounds or 3 8" squares.
