Alysia's Basic Meat Lasagna

I took this to a party and everyone still keeps talking about my "amazing lasagna" months later. I've tried the recipe twice, both times doubling the amount of sauce, and definitely think that is the key. Otherwise follow the recipe completely and it's amazing!!

Tuna From Can To Frying Pan

You know, we actually liked this! I guess I had low expectations because of what was in it, but I didn't have a lot of time last night and only a few things on hand so I through this together. I added sriracha sauce to the tuna, and roasted some garlic with the broccoli, but all in all we both gave it a thumbs up!

Red Cabbage-Asparagus Salad with Tahini Dressing

I loved this! So much better than typical cole slaw (probably because I love tahini). I unfortunately did not have any feta on hand (but I think it would be even better with it), and I replaced the asparagus with broccoli prepared exactly as the asparagus would be because I didn't have any asparagus. My husband told me he wanted me to add Chulula next time to give it a kick, which I will try, but I'm still giving this five stars because I've eaten it all week and the flavors get better every day in the fridge!

Curried Tofu Salad

I did not have any dates on hand and replaced the mayonnaise with greek yogurt (a standard of mine to lower the fat content). I thought the flavors were really good but I think next time I will add one more chopped vegetable (probably celery), and lower the amount of tofu. Or else maybe I cut the tofu into too big of pieces because it just seemed to be too much tofu. Otherwise I really liked it!

Quinoa Salad with Grapefruit, Avocado, and Arugula

Wow is this good!! So many fabulous flavors going on! Changes based on what I had on hand: I did not add the cilantro, cranberries or grapefruit, but did add some steamed but still crunchy - cooled broccoli. It added another green to the mixture and truly the dish was so good! I would make this again and again.

Cheesy Quinoa Pilaf with Spinach

Yum. I made the recipe exactly as it is and it was perfect. Because I like spinach so much, I may up the amount of spinach in the dish (or lessen the amount of quinoa), but regardless it's delicious and deserves 5 stars!

Mad Hatter Salad

I love this salad and have now made it 4 times....and everyone always tells me it's the best coleslaw they have ever had! I spice it up with chili oil when I toast the nuts, and have also tried it with sesame seeds and pine nuts as substitutions - all good. I remove the noodles and butter and just use either chili oil or sesame oil. yummy!!

Blue Cheese Fried Potatoes

These were awesome. I agree with the person that said take your time because we love the potatoes nice and brown on the outside. I also added some white wine and chicken stock while they were cooking to let them soak up some additional flavor while getting brown on the outside. All in all I probably cooked them at medium for an hour, but we all raved about them during the entire meal and my husband I fought over who was going to get to the leftovers the next day. Thanks!

Winter Vegetable Hash

My husband and I couldn't believe how good this was! We also added toasted sesame seeds and chili flakes on top and a little bit of worcester sauce but I think it was good even before that. There are a lot of additions/substitutions I will try with this one (including less potatoes and with some scrambled eggs. So happy to find a good recipe that uses Kale! Thanks!
