Spicy Southwestern Slaw

This was a major hit with my modifications. I followed all directions except i did 1/4 cup of olive oil, and 1/4 cup of red wine vinegar, also used a splenda packet. I also added the juice of a lime. But the biggest addition and what i got raves about was the mango that I added. I used a firm unripened mango (actually, half ripe which is firm, but still has a touch of sweetness) - this got RAVE reviews at the party and EVERYONE wanted the recipe. This modified version will be a staple at my home!

Coquito

i made this recipe 2 years ago when i was visiting family in Florida, last year i was pregnant so my rule was 'if I can't drink coquito, NOBODY can!" But this year, my inbox is full of requests from my friends that had it 2 years ago . . . THAT should say something about this recipe! :D Thanks Brandi!

Colossal Caramel Apple Trifle

I don't care for apple much, but everyone at our Thanksgiving potluck seemed to like it :) I added toffee chips for extra crunch and used cinnamon swirl cake as a previous poster suggested - got lots of compliments and it was the prettiest looking dish on the table

Corn Sticks (Sorullos de Maiz)

These are just like the sorullos I used to eat in Puerto Rico . . . i made them plain and served them with 'mayoketchup' and they were perfect. had the left over with my morning coffee . . . thanks so much for posting this!

West Indies Guava Barbecue Sauce

i loved this, and actually i used guava paste instead of an actual guava. The guava paste has a more concentrated flavor than the fruit, so be careful how much you add. I did it to taste, but also be aware that guava paste is a bit grainy (but that didn't bother me). I just chopped up up the guava paste into small cubes and heated it up according to instructions, then transferred to the blender and gave it a quick whirl, then poured back in the pot and added the rest of the ingredients and followed the directions. It was AMAZING.

The Amazing Swedish Meatball

i took everyone's advice and cut down the salt, i thought the meatballs were pretty good, but while i was cooking the sauce (and taste testing) i knew i had to doctor it up a bit so i added onion powder, and a few extras . . . . came out good.

Pumpkin Dip

Everybody was crowding around this dip, I served it with gingersnaps and oatmeal cookies. I also scooped out the inside of a small pumpkin and lined it with saranwrap and filled the pumpkin with the dip. it made a great display and i was quite the popular one! * just made this for a church event and we found new use for this dip - put it in your coffee with creamer . . . tastes just like a pumpkin spice latte!!!

Jay's Jerk Chicken

I am overseas and they don't sell allspice here so i used what they say is the closest thing to it which is 5 spice chinese blend, it was still really good, but a good friend came to visit from the states and brought me a container of allspice, I CAN'T WAIT TO TRY THIS AGAIN!!!!

Marinated Tuna Steak

My favorite tuna steak recipe ever! My husband hates fish but really enjoyed this, he keeps asking for me to make it again. I let them marinade for a whole day, it was really good. thanks for a keeper!

To Die For Blueberry Muffins

I followed the recipe religiously, i too ended up having to baking it for an extra 20 minutes, the topping ended up being a dark brown with a cave-in in the middle, it expanded outwards to connect with the other muffins. I ended up having to cut the tops off and serve it on the side as a cookie alongside a bald blueberry muffin. I think part of my problem was that I used margarine instead of butter which made the crumb topping more like a cookie. The overall taste was ok, but i don't think i'll be trying this recipe again.
