Amby Rae's Cucumber Salad

We love this salad recipe and it's so easy to prepare. Be sure to mince the garlic very well - we bit into a few larger pieces and had quite an awakening. I couldn't find any fresh mint so I substituted dried flakes. If you do this you can be generous because they're not as strong.

Apple Dumplings I

For some reason this didn't work for me. The apples were too big for the biscuits, it took forever to prepare the recipe, and the mixture just kinda sunk to the bottom of the pan - didn't flavor them well at all. I think next time I'll try another recipe.

Alysia's Basic Meat Lasagna

This was a great recipe! I couldn't find shredded provolone cheese (or even a hunk that I could shred) so I bought the 'Italian mix' of cheese from Kraft. Next time I'll substitute Italian sausage for part of the meat to give it a kick!

Chicken Enchiladas I

Italian Style Meatloaf I

We love this recipe!! I use only half of the diced tomatoes, it seemed a little soupy. I also have a hard time getting it all to fit in one pan, I usually split it and make two smaller loaves.

Broiler Casserole

The recipe turned out to be a soupy mess! There really isn't much to it and the spaghetti sauce overpowers any flavor the onion and peppers would have added. It would be a nice side dish, but left us wanting more as a main dish.

Italian Meatball Sandwich Casserole

The recipe was great! The cream cheese/mayo middle was a little too much, next time I'll only use half of the mixture. Overall we enjoyed it!

Beef Tenderloin with Horseradish-and-Roasted Garlic Crust

The recipe was great, but it seems to lack the every-day person necessities (really, who has 2.5 hours to cook?) It was a family hit and we'll have it again! I couldn't afford the Beef Tenderloin at 10.99/lb so I bought a different slab of meat. I also didn't roast the garlic- I minced it instead. I have no idea what 'prepared horseradish' is so I used horseradish sauce.
