Raspberry Lemon Muffins

YUMMY! I made mine into mini muffins. Next time I will crush up the berries a bit. The whole raspberries in a mini muffin tin ended up being too large and made it difficult to remove the muffins from the tin. I did everything the same except used whole eggs...I doubled it and didn't have 4 eggs, so I just used 2 whole eggs.

I thought this was very tasty! I have experienced the hard blobs of milk/wine/cheese and found that if you start with the wine and simmer it, then once it has simmered add the cheese, then sour cream, then milk it doesn't blob up.

Ground Beef Stroganoff

My husband isn't a fan of ground beef, but this is his comfort food! I love this and make it often. Tonight I didn't have any beef broth, but I had a packet of Au Jus...I used about 1/3 of it, and I think it is even better, and if it's too thin, just add a tablespoon of flour to 1/4 c or so of milk and add that to your mixture...WORKS LIKE A CHARM!

Tara's Sweet and Chunky Chicken Salad

This is pretty good. I didn't have most the ingredients so this is how I fudged it. Precooked chicken breast strips (frozen and thawed), mayo, red onion, craisins, and walnuts...oh and salt and pepper. I put it all in a food processor until the consistency was just right!

Pesto Cheesy Chicken Rolls

Husband loved it. He's a pesto freak! I also rolled in bread crumbs, served with some pasta roni and green beans. A great, simple meal.

Creamy Veggie Fondue

Wow!!! My husband LOVES cheese...and he loves this fondue more than the Melting Pot's. We stick to the recipe...simmering the wine first like the others suggested. Lastly we serve with cauliflower, broccoli, mushrooms, carrots, bread (usually sour dough), and granny smith apples.

Yummy!!! I also used frozen bread dough...and had alfredo sauce on the side for dipping! Like others, the cook time was off and they were ready in 10.
