Kahala's Shrimp and Broccoli Toss

Reviewed: Jun. 5, 2006
As is I would rate it bland an okay I wouldn't make it again but I added parmesian, tons of garlic, tomato paste, wine, and basil and the kids gobbled it up haha. Guess it is a different recipe now but the kids liked it much better and so did I.

Skiers' French Toast

Reviewed: May 31, 2006
AWESOME! I used regular store bought sliced bread and removed the crusts. For the egg mixture I used farm fresh eggs but reduced the milk a tad to a little over a cup. I added cinnamon and nutmeg as well. Also I didn't let the syrup mixture simmer I just melted the butter with the sugar and used PAM on the dish first...a MUST with this dish. A new favourite - very fattening but very good!

Most Excellent Breakfast Casserole

Reviewed: May 25, 2006
I used regular pork sausage and removed the casings and made sure to break it up to small pieces. I used real cheddar and added more on top as well. I topped with chives as well. This was excellent and hearty. A make again for sure.

French Toast I

I really liked the nutmeg and the vanilla addition. I also added a few tablespoons of brown sugar to the mixture before dipping and it was really good. Great recipe.

Stuffed Jalapenos III

Reviewed: Dec. 31, 2005
These were amazing however, I did use the pineapple cream cheese (comes that way in the store) and whipped it up using my hand mixer. I used very large jalapenos thinking they wouldn't be as hot but they were but people still gobbled them all up! Actually, 3 people ate all of them prior to me getting them out of the kitchen - I was stunned. Amazing and am making them tonight. Thanks for a terrific recipe.

Zucchini Apple Bread

Reviewed: Oct. 28, 2005
A very nice bread but it was very chunky. I grated the apple and zucchini the second batch and it was much better. Also I found it dry when I mixed in the zucchini and apple so I added a 5th egg which did the trick. Maybe my eggs were just on the small side but no matter. I'm sure it will be a big hit at my pumpkin carve tomorrow. I do love how the apple and zucchini merry together. Lovely recipe.

Greek Pasta Salad I

Reviewed: Oct. 16, 2005
This was an amazing salad. So wonderfully different. I too found that it made more though. I made a recipe for 6 for a pot luck and it made a huge bowl as I found it could take more pasta and veggies to the amount of dressing. I also trippled the amount of cheese. It was a rave.

Orange Baked Ham

Reviewed: Oct. 5, 2005
This was pretty good but found it could have used more honey and more zip. Next time I will use this recipe but add Worchestershire sauce.

Grilled Sausages with Caramelized Onions and Apples

Reviewed: Oct. 5, 2005
I too found this a very good dish but not out of this world. I think doubling the brown sugar and vinegar would be better. It was a nice change having the apples in there and the combination of flavours was good. I will definitely make this again. A nice autumn dish.

I too used the changes the last person posted and WOWOWOWOWOOW. It needs to sit a bit for the flavours to fully merry but what a great recipe. Thanks so much everyone for your feedback and for the original poster. My new tradition is born.

Mahogany Chicken Wings

Reviewed: Aug. 21, 2005
I actually tweaked this recipe a bit and my husband said on a scale from 1-5 it was a 7! I basically just added 1/4 cup oyster sauce, instead of chilli sauce I subbed in Sambal Oleke and added 4 tbsp thai garlic chilli sauce. Then I kept the wings in the sauce after marinading for cooking for 40 minutes. At that point I put them to a separate baking pan and drizzled only a little sauce on them and baked for a further 20 minutes. While baking those I took the remainder of the sauce and heated it on a burner. I then added some cornstarch to water and then added that to the sauce pan and stirred until thick and served this as a dipping sauce with the wings. PHENOMINAL! Thanks for this recipe. Hub asked that I make this for everyone when they come out.

The Best Thai Peanut Sauce

Reviewed: Aug. 14, 2005
This is very good but love a good heat so instead of the hot sauce I added 3 tsp of Sambal Oleke and 3 tbsp of Garlic Chilli sauce as well as 1 tsp of Red Curry Paste as well as doubling the garlic and adding 2 long green onions chopped fine.

Pumpkin Cookies with Penuche Frosting

Reviewed: Aug. 14, 2005
Huge hit. Made these on a rainy day. My daughter tried a cookie and said "this is better than the stuff" meaning the batter she licked off the beaters. One BIG difference though I used a tin of ED Smith Pumpkin Pie Filling as they didn't have puree. I also patted down the batter after spooning it on the cookie sheet so they were not as cakie. Also, the icing was a bit sweet but only if you iced the whole cookie so I just drizzled it across them and WOWIE amazing. They turned out phenominal. Thanks for the recipe.

Parmesan Spinach Balls

Reviewed: Jul. 17, 2005
I followed the amount of bread crumbs and everything to a tee BUT added other things as people suggested and these were adored. I added 1/2 a head of minced garlic, season salt (as I only used regular bread crumbs I added dry basil as well). I also added 3 tbsp Sambal Oleke and 4 tbsp of chilli garlic sauce. I only used 1-10 oz package of fresh spinach also. It was lovely!

Grilled Steak with Olive-Blue Cheese Glaze

Reviewed: Jul. 17, 2005
I decided to use gorgonzola and followed the rest of the recipe to a "T". We found it was a tad bland. The consistency and everything was perfect (I as well simmered it for a wee bit longer) and I used Consummee rather that broth. I will try this again with Blue Cheese as I believe that will give it the kick it needs and perhaps put in more than the recipe calls for. Otherwise a lovely creamy type sauce over the potatos and such.

This is fabulous. I used red pepper jelly in one of them and Apricot in the other and they disappeared from the table within 10 minutes! Fabulous.

Blue Cheese Crusted Filet Mignon with Port Wine Sauce

Reviewed: Jul. 15, 2005
I actually used this on a roast. I had put the roast in the crock pot and made the sauce as the recipe said. Then I sliced the roast put the blue cheese mixture on and poured the sauce over it reserving some to serve with and cooked it in the oven for 5 minutes. It was FABULOUS. I had people for dinner and they went nuts for it. Thanks for a great recipe that is very versatile.
