Creamed Spinach III

As written, I found it rather bland, hence the 3 stars. With suggested changes from other reviewers (saute onion and garlic, parm cheese) it was a 5 star. Will certainly make again.

This was good, although my potatoes were still rock hard at 10 minutes, I ended up having to add a half cup of water in order to make them tender.

Spiced Butternut Squash Soup

This was absolutely wonderful. I thought it would be good after reading the reviews, but it was even better. I did not have any sherry, so substituted in some red wine. I did not add the allspice or nutmeg as I did not have any. I did double up on the cayenne, as we like a bit more bite. I also added some shredded carrots along with the squash. I didn't add the optional sour cream, as it just did not need it. Thank you for submitting this recipe. It is my new favourite soup.

Cara's Creamy Stuffed Shells

Excellent. Insanely good the next day. I also tried the suggestion about not cooking the shells, but I found them too hard when served up, although they had softened considerably when re-heated the next day. Next time, I will cook them before stuffing. I agree that there is way too much stuffing vs sauce ratio. I took the advice, used 1 lb of beef, along with 3 hot italian sausages, and still had plenty left over after stuffing the shells. Added the left over stuffing in with 4 cups of the sauce to cover the shells. Sprinkled mozza on top and baked. This will become a family favourite.

Indian Chicken Curry II

I was a bit alarmed when after adding all those ingredients to the onions, I made quite a paste, but in the end, it was very good. Next time I'll add more coconut milk and add a veggie. Chopped spinach, potatoes or chick peas would make it better for me.

Southwest Corn Salad

This was easy and very good. Next time I will add an avocado soaked in lime juice, as I think it would make it a 5 star. Cilantro would also be a wonderful addition.

Roasted Chicken with Risotto and Caramelized Onions

Incredible. I halved the amount of balsamic as suggested by many, and found I only needed 6 cups of broth to make it the correct texture. Time consuming in the making because of having to stir so often, but other than that, really easy to make.
