I made this last night for my shift (I'm a fireman). I upscaled this recipe to feed 12 and actually made 16 enchiladas with it (which fed 7 people, could have fed 8). Some other reviewers said that this might be a bit bland, so when I was cooking the chicken in the pan, I seasoned the heck out of it with a touch of salt, a lot of garlic pepper, cumin, chili powder, paprika, parsley, basil and pretty much everything else i thought would taste good. But everyone on my shift LOVED these. My captain said I need to make them more often.
