Mozzarella-Stuffed Meatballs

Extremely quick and easy to make. I love it! I added some extra Italian spices and minced garlic to my sauce. This is a great recipe to replace cheap unhealthy pasta and fatty ground beef.

Peanut Blossoms II

Great recipe! I made these last year exactly the way it is written. The taste was great, but I had a problem with them falling apart. I may have cooked them too long. This time I did half shortening and half butter. I cooked the cookies for 9 minutes at 375. I took them out and immediately put the kisses on. I kept the kisses in the fridge prior to putting them on the cookie. Once I put the kisses on I put the cookies back in the over for one minute. I let them cool and then put them in the fridge. These turned out great!!! They are not falling apart at all. Sooooo good!

En-light-ened Chocolate Chip Cookies

Decent cookies. Very cake like. The taste is pretty good and obviously less calories so that is always a plus. I only cooked the cookies for 15 minutes, but I think I would decrease the time by a minute or two if I were to make them again.

Cheesy Southwest Chicken Skillet

Very easy to make. I ended up using ground turkey instead, because when I went to the store the rotisserie chickens had another hour to cook so I said forget that. I browned the turkey in a skillet and cooked the pasta in a pot according to the directions on the box. I added several spices to the ground turkey: onion powder, garlic powder, pepper, ground red pepper, and red pepper flakes. I have never tried any of the Progresso starters before so not sure if this recipe would be too bland. I drained the pasta and added it to the skillet and followed the rest of the recipe. I think overall it was good, but needs more spice. Maybe some hot sauce would help at the end. I will try again when I have a rotisserie chicken and maybe the flavors from the chicken will make it perfect.

Slow Cooker Boneless Turkey Breast

My turkey did not come out as good as I wanted it to, but I am giving this recipe 5 stars anyways because I am pretty sure it was my fault. The spices are on point, totally awesome. I used a 3 pound boneless turkey breast and I found so many recipes online saying conflicting arguments about cooking it frozen vs thawed. So I defrosted it in the fridge for 14 hours and it was partially frozen in the center when I threw it in the crock pot. I put it on low for 8.5 hours. It tasted very good, but I am pretty sure 7 or maybe even 6 hours would have worked fine. Also, my slow cooker comes with a rack and instead of putting the turkey directly in the water & spice mix I placed it on the rack. Next time I may try putting it directly in the mix.

Cream of Sweet Potato Soup

Absolutely love this recipe!!! Very easy and the taste is so good. Instead of baking the potatoes I boil them. I boil them until they get semi soft to the point I can peel off the outer layer very easily. If you are more into super sweetness, then use very little cayenne pepper.

Creamy PHILLY Pesto Chicken

This recipe is the best. I make it all the time. I am so glad I found this recipe. I usually make it with whole wheat pasta and sometimes add in sauteed mushrooms. You can make the sauce thicker by using less broth. Either way it always turns out awesome.
