New England Blueberry Coffee Cake

Rick's Special Buttercream Frosting

This frosting is very good although next time I will put a little less shortening. I also added some pureed strawberries that I had left over from a strawberry cake I made.

Blueberry Crumb Bars

These are THE best blueberry bars I have made. Made them for a get together with some family and everyone loved them. I used butter as others suggested and replaced the cornstarch with tapioca.

Bolognese Spaghetti Sauce with Sausage (Ground Beef)

This was awesome. i used italian style ground turkey for the meat, cooking it separate from the veggies so I could drain it well. I added mushrooms to the veggies, then brought it all together.

So . . . I made this with things I had on hand. I used skinless chicken thighs. Didn't have any soup, so I used a couple packages of gravy mix. I put the chicken in the baking pan and put the swiss cheese on top. then I put half of the gravy, half a package of stuffing mix and the rest of the gravy. Oh, I also put 3 sprigs of fresh rosemary on the chicken before the cheese. It was delish!!! Even my picky husband said it was great.

Salmon and Potato Pie

This is the best salmon pie recipe I have ever made. I cooked the onion and garlic until it was slightly caramelized. Instead of thyme, I used some lemon thyme. I also used only 4 potatoes, used the liquid from the salmon and added milk to measure about 1/2 cup. That was plenty for the consistancy of the pie. Thanks for the great recipe.

Cowboy Oatmeal Cookies

My husband just told me these cookies are GREAT! And i have to agree. i followed some of the reviews and used 3 cups of oatmeal and 1 tsp. of vanilla. I also used chocolate chips instead of butterscotch. Simply delicious. Thanks for the recipe.

Creamy Dill Dipping Sauce

This sauce is delish. I used dried dill, which I grew over the summer. 1 tsp is all you need. It goes great with the Salmon Croquettes from this site. Thanks for the recipe.

Salmon Croquettes

These are wonderful. The recipe is very forgiving. I didn't have green onion or wheat germ, so I substituted minced onion and breadcrumbs. I made them into patties and fried in the olive oil. They are even made better with the creamy dill dipping sauce from this site.

White Chocolate Raspberry Cheesecake

This cheesecake is AWESOME!!! Upon reading reviews, I used 2 cups of crushed oreos for the crust. I didn't wrap my pan in foil and I should have because the butter from the crust leaked into the oven. I turned the oven off after one hour and let the cheesecake sit for another hour. It was perfect - no cracks,no falling center and the taste was so rich and creamy. Let the cheese come to room temp before beating and do not overbeat. I beat in the eggs with my hand beater on low speed, then mixed in the chocolate/cream mixture with a whisk. Thanks for the great recipe.

Sunday Dinner Mashed Potatoes

This is the best way to make ahead your potatoes. I made them on Tuesday for Thanksgiving on Thursday and all I had to do was warm them in the microwave. Perfect!!

Italian Sausage Soup

This soup was awesome!! i added some orzo and extra beef stock. I also used a box of frozen chopped spinach. Just put the frozen block in the pot. it melts quickly and adds more flavor.
