Chewy Peanut Butter Brownies

loved these! i sprinkled chocolate chips and crushed peanuts on top, and my family loved them. they're quick and easy, and taste great!

Soda Cracker Pie

Absolutely wonderful, and so very easy! We loved this! I even cut back on the sugar on the second one and got away with it -- with rave reviews on top of that! I like to leave my crackers a bit chunky -- it seems to have more crunch that way.

Mom's Chocolate Meringue Pie

Best Peach Cobbler Ever

It's quick and easy, but not the style of cobbler I grew up on. But great for what it is, and seemingly the fluffy cobblers are more the general rule. It'll definitely be something I'll do when I want something quick & easy. I did use the juice and the fruit, as we like our cobbler juicy. I did kind of heap my spoon of corn starch, though, to keep it from being runny. I usually stick to a recipe if I'm going to review it, and I think this one is fine just as it reads. A winner! I did check it about the time the batter had baked up, and sprinkled some cinnamon and sugar on top for it to crisp.

Crazy Crust Pizza Dough

I made a double recipe of this the first time I made it. I doubled everything except the eggs - instead of doubling two eggs, I used three because so many had suggested using only one egg. The first crust actually GREW instead of shrinking like most do. The other, on a thinner cookie sheet, did shrink slightly. The kids LOVED it and went on and on about the crust. I also sprayed the pan heavily, and used a bit of cornmeal sprinkled on it to prevent sticking. Easy, quick, and tasty! We'll be using this again!

Cherry Almond Coffeecake

I know better, but didn't put my hands on my ingredients and no longer live alone - so sometimes they're consumed without my knowledge! I had to substitute plain yogurt for the sour cream, and for the glaze I used lemon juice and extract with a couple of tablespoons of milk and melted butter with powdered sugar to give it a bit of tartness, since I had no almonds. I made it Lemon-Glazed Cherry coffeecake. And it was a sure hit. Next time, I may make it with lemon cake mix instead, and maybe strawberry pie filling.

Chicken and Dumplings I

loved it! make sure the broth is WARM, and not HOT though. i made the mistake of using hot, then it was really hot when i went to work it with my hands. these do best rolled really thin, too. work them too much & leave them too thick and they're tough. but this will definitely be the recipe i use from now on!

Unbelievable Rolls

This will be the only recipe I use for rolls from now on! Yes, the directions are seemingly a bit odd compared to my other recipes I've used in the past, but the rolls were fluffy, tender, and baked beautifully! It helped that I read other reviews first, and some of them clarified some of the recipe instructions a bit... and I followed the clue about the salt and added it on my last knead before I shaped and baked the rolls. I believe that helped tremendously. Around here, we like to pull our rolls apart, but these bake better and prettier with a little space between them. Also, my only complaint (and no one else agreed with me except my fiance') is that there was not quite enough salt in them. I'll be adding 1.5 x the salt. OHHHH, and it said 16 servings... so I doubled the recipe without reading ingredients first or I'd have realized it was going to make more than sixteen rolls. LOL I make my rolls small, and we ended up with about 7 dozen rolls. LOVE this recipe, and if it doesn't work for you - maybe read some more reviews to catch some hints from seasoned bakers, and make SURE you check the exp date on your yeast. I had bought some without looking at it in the store and it was already expired. Also, if it has encountered extreme temps it won't be as good. Keep those things in mind, because this IS virtually fool-proof.
