I have been married for 5 years to the most wonderful guy! He is the main cook in the family, but I enjoy it also! I work on average 14 hours a day... so, quick recipes are a must as long as they don't sacrifice taste!

I have never found a pork tenderloin recipe that I like.... :( They always turn out disgusting!

California Chicken Spaghetti
This is a staple in our house! We have been making it since 2005 and I am just now rating it! haha. We always keep these ingredients on hand and we make it quiet often! This recipe is great as is... but, we add a few other ingredients depending on our mood. One change we always make is we use roasted garlic because we like the flavor it gives off. Some other items we sometimes include are: mushrooms, black olives, artichokes, and crispy bacon. This is a keeper! Oh by the way- we have made this many times for company and always get rave reviews!

Chipotle Chile and Blue Cheese Sauce
I thought this sauce was pretty good. Personally, I didn't think it was too hot. We eat spicy foods quiet often... so maybe that is why. I was worried about it being too spicy when I read the reviews before trying the recipe. I went ahead and used the peppers anyway, but I made sure that I did not include the seeds. Next time I will include the seeds to give it more of a kick. The flavor was really good though. We used this sauce on homemade burgers with thick, crispy bacon and it was wonderful. Oh yeah- I also made homemade steak fries for the side dish and this sauce was fantastic drizzled over the top of the crispy fries. This is a keeper!

Manicotti Italian Casserole
This casserole was very good. Personally, I thought the italian sausage was a little strong. Next time I will use 1/2 pound of sausage and 1 pound of hamburger meat to suite my taste better. The pepperonis on top were wonderful! They were perfectly crisp! I also used only 1 jar of sauce and I thought it was just right.
