Spinach, Caramelized Onion, and Muenster Au Gratin Potatoes

Superfabulous! I used 1/2 milk, 1/2 cream and greased the dish with butter. I sautéed the onions in EVOO and for the cheese I used smoked gouda and monterey jack which I had on hand. I only had to bake for 45 mins. YUM!

Salmon Cakes by Melt® Buttery Spread

OMG - these were STUPENDOUS! I modified the recipe a bit (out of convenience): didn't have Old Bay spice so I used cajun seasoning instead; I subbed red onions for the scallions and yellow onions and, I added chopped red peppers. I melted butter then forgot to add it but, didn't miss it at all! And I didn't have time to let them rest/refigerate but it didn't seem to affect the flavor. I will definitely make these again - thank you!

Maui Chicken

This was really good but I did make a few changes: increased ginger to 3T, used 2T sriracha instead of the red pepper flakes (we like it hot) and replaced the mushrooms with fresh broccoli. I also added a little corn starch to thicken the sauce. I will try this again with a sprinkle of brown sugar next time! (It only took 45 mins to make - not 1.25 hours)
