Amazingly Easy Irish Soda Bread

Used the recipe, but changed the method. Like this one better than my other recipe because it uses buttermilk and adds an egg and butter for more richness. There are some key steps missing from the instructions as published. Here are my suggestions.... 1. Wisk the dry ingredients thoroughly before CUTTING in COLD BUTTER in place of 1/2 c. margarine. 2. Beat together egg and buttermilk, adding extra buttermilk if needed to bring the dough together. 3. Separate the dough into 2 portions (baking it as one large round browns the outside before it's was baked all the way through). Agree with brushing the loaves as they bake. Other reviews mentioned lowering the oven temp, but I think the higher temp is needed to achieve a good texture. Optional: add caraway seeds or reconstituted raisins or both.

Coconut Walnut Biscotti

I'm sure this recipe is great as written but biscotti really lends it self to substitutions and so I did. Followed the suggestion of other reviewers and reduced flour to 3 cups. Used chopped almonds in place of walnuts and 3 extracts: 1/2 tsp. each of vanilla, coconut, and almond. With addition of mini chocolate chips it's like Almond Joy biscotti! It's easier to slice if it cools for a full 15 mins first and don't use a sawing motion when slicing - just cut straight through.

Harvest Pumpkin Cupcakes

My son asked for a pumpkin cake with chocolate chips for his birthday, so I baked this recipe in 9" layers and added 1 cup of semi-sweet morsels to the dry ingredients. It baked in the same amount of time - 30 mins., although the layers didn't look done, they tested clean. The cake frosted very easily. Was exactly what he was hoping for - we liked it a lot!

Chicken Wild Rice Soup I

Expected more from this recipe, especially with all the great spices and veggies. Was hoping it would be similar to a wild rice soup by Panera. Will try again and this time use half white rice and half wild rice. Perhaps cooking the rice in the soup will thicken it without so much flour.

New England Clam Chowder I

This was a good base recipe. I used chicken broth in place of the water. Since most canned clams are salty, I eliminated the salt. Added finely chopped celery with the onion. If you want to thicken the broth, be sure to do it BEFORE adding the drained clams. Once the clams are added the soup should be gently heated - definitely don't let the soup boil or heat too long or the clams become chewy. Added minced fresh parsley with the clams.

Apricot Cream Cheese Thumbprints

Butter + cream cheese + apricot ALWAYS = delicious! The dough was a little too sticky and the first batch didn't hold their shape, but after adding a little more flour they worked out perfect.

Tart Cranberry Relish

OK - I cheated. My rating above is for a dramatically changed recipe. As written I'd give it 2 stars - "tart" is an understatement - and I LOVE cranberries. This recipe does, however, make the basis for a terrific cranberry relish. I added sugar a little bit at a time to taste - probably more than 1/2 cup, reduced the vinegar by half, left out the cinnamon and cloves because I was looking for an unspiced relish. I chopped the apple because I wanted the different fruits to be of similar size. Crushed some of the apples at the end which made the sauce nice and thick. With these changes everyone loved it - especially on top of pumpkin waffles or oatmeal.

Manhattan Clam Chowder II

Great base recipe for traditional clam chowder and only minor changes needed to give it a little more umph! Used chicken broth in place of water, sauteed veggies first in small amount of olive oil to soften, added finely diced celery, celery leaves from one stalk, and a bay leaf, plus a few dashes of ground cayenne. Added fresh chopped parsley at end with clams just before serving. Too salty as written - will reduce salt next time.

Pineapple Chicken Tenders

As written, this recipe needs more flavor. Next time I'll add minced garlic and maybe ginger too. Instead of buying pineapple juice, will use a 20 oz. can of pineapple chunks - which yields about 1 cup of pineapple juice and thread the pineapple chunks along with the chicken strips. The marinade would work as is, if the cooked chicken tenders were offered with a dipping sauce that complimented the flavor.

Angel Hair Pasta with Shrimp and Basil

Terrific, quick and easy recipe. Made only minor changes - I forgot to drain the tomatoes so the sauce took longer to boil down but after reading the other reviews it sounds like this was a good accident. Increased the fresh basil and sneaked a little fresh chopped spinach in with the herbs (my family members think they don't like spinach - HA!). To avoid overcooking some of the ingredients I layered everything as it was cooked in a deep covered casserole to keep warm - pasta, then the shrimp, last poured the sauce over all. Don't reheat the shrimp in the sauce as they'll be overcooked. Also add the fresh herbs during the last 2 minutes of cooking to retain more flavor.

Italian Sausage Soup with Tortellini

My family and I thought this was lacking something and too salty. We didn't have fresh basil or parsley, so I used dried. Despite that, I think the real problem was using beef broth and the fat from the sausage, despite my cooking and draining it well. Maybe with a leaner turkey sausage and either chicken broth or a combo of beef broth and tomato juice would be more to our liking.

Playgroup Granola Bars

More like a thick oatmeal cookie than a granola bar. I baked mine only 25 mins. and they stayed nice and chewy. A plastic knife cut the bars better than stainless. Too sweet for my taste. Next time I'll reduce brown sugar to 1/2 cup and add dried cranberries and almonds. Will also try cutting the oil by half with applesauce, using whole wheat flour and ground flax seed to increase nutritional value.

Cranberry Icebox Cookies

I am a cranberry addict and loved these! Made the recipe as stated. Halved some of the cranberries and chopped the remainder to distribute the flavor evenly throughout. Didn't leave any whole. Agree that grated orange zest would be a nice addition. Substituting dried cranberries would completely change this recipe from the original. This cookie is a great addition to my collection of icebox cookie recipes. We keep a couple of rolls of homemade cookie dough in the freezer during the holidays so I can always have fresh cookies on demand. Prevents my husband for eating all of them at once too.

Basic Chili Recipe

I like to simmer this until about half of the water from the tomatoes evaporates. Nice consistency. Great over rice or topped with cheddar cheese, sour cream or sliced green onions.

Slow Cooker Beef Stroganoff I

What a wonderful surprise! Such great flavor and texture from so few ingredients and little effort. I had 1.5 lbs. of beef and only one can of golden mushroom soup so I improvised by adding 1 1/3 cups beef broth instead of the water. Started with frozen beef cubes.
