Rosemary Lemon Grilled Chicken

I used olive oil instead of butter. Next time I'll also make up some of the herb butter mixture with roasted garlic (instead of raw) and serve it with chicken as the original recipe does. The roasted garlic will let more of the rosemary shine through.

Spinach Caprese Salad

Pina Colada Ice Pops

As written this recipe merits only 3 stars, but I think there is great potential. Next time I'll use a very ripe fresh pineapple instead of canned. A few drops of rum flavoring might be better than the vanilla for a true pina colada taste. Decreasing the coconut milk to 1/2 a can would allow more of the pineapple flavor to shine through. I'm trying to avoid sugar, but some sugar and fresh lemon juice would brighten the flavor.

Easy and Delicious Ham and Potato Soup

Great soup for a cold winter supper. Chose this recipe over others on the site because of the cauliflower and when I went to the grocery store they were sold out of cauliflower! Since the soup was short a vegetable, I added diced carrots. Omitted the salt, reduced the garlic to one clove, added sliced scallions, and minced fresh parsley. Think it would be even better with the cauliflower. Good with or without shredded cheddar cheese on top.

Butternut Squash and Cranberry Couscous

A great dish to bring to a Thanksgiving dinner - it can be made ahead and travels well. With some minor changes, this recipe would rate 5 stars. Next time I'll reduce the water by the amount of lemon juice and squeeze all of the water out of the cranberries (couscous is too sticky otherwise) and add the lemon zest to the water with the couscous. Also cook the celery with the squash - it will still have some crunch. Like the suggestion of shallots or onions roasted with the squash - more flavorful. Tastes good warm too.

Chicken Breasts Stuffed with Perfection

I understand why this recipe is rated so highly - it's a great blend of flavors. However, I'm sensitive to salty dishes and this one is too salty for me due to the feta and parmesan. Other than that it's great.

Garden Fresh Tomato Soup

A very good basic tomato soup. I have a love-hate relationship with my food mill. Hate using it; love the results. It kept all of the seeds and skins out of the soup. Can't imagine getting the same results with a blender or infusion mixer. The soup would be better with the addition of garlic and basil.

Creamy Dill Cucumber Toasties

This recipe was a big hit at our party. A Norwegian friend thought it was a Scandinavian recipe and Indian friends thought it reminded them of an Indian recipe. I agree that adding the seasoning to taste is a good idea. Used dried dill in the cream cheese and fresh dill sprigs as garnish. Served on a chilled platter.

Red Potato Bites

Used tiny red potatoes. My preference would be to use less sour cream and more cheese. Next time I'll mix some extra cheese into the potato filling and top with the rest. I cut the potatoes in half before cooking and a small slice off the bottom of each half so they wouldn't roll around. Had no trouble scooping out the potatoes with a melon baller when they were cooked. The skins don't rip if the potatoes are still firm (not overcooked).

Red Velvet Crinkle Cookies

These are perfect for Christmas! I confess that I changed the recipe a bit because I didn't have time for a dry run with it as written and I was looking for a plain rich chocolate flavor. My changes were simple - omitted lemon zest and wisked 1/4 cup unsweetened cocoa into the dry ingredients and 1 tsp. vanilla extract in with the eggs. The result was the flavor I'd hoped for with a light cake texture. I'd prefer a slightly denser texture, but this can't be beat for for an easy, quick, from-a-mix recipe. Using a 1-inch melon ball scoop yielded a small cookie - perfect for cookie exchanges. Otherwise I would double the cookie size. The trick to the crackles is to roll the dough balls around until the confectioners sugar is thick and even all the way around. Be sure not to overbake or the cookies become too firm and dry. Very pretty!

Rosemary Chicken Stew

A good winter stew. Used canned beans instead of dried to save time. Also crushed the rosemary and sauteed the vegetables in olive oil before adding the canned tomatoes. Next time I'll cook the chicken breasts whole and remove them as soon as they are done to avoid overcooking, refrigerating and cubing chicken when cool. I'll simmer the stew longer to to meld the flavors and add the cut up chicken and drained beans at the end. Some minced fresh parsley would go well in this dish. Might be interesting to use ground chicken to create a consistency similar to chili.

Braised Balsamic Chicken

As written this dish doesn't cook long enough for the flavors to meld together. It would be better if the juices reduced and thickened, but there's no way to do that in 20 mins. I agree, fresh minced garlic is the better way to go. I might try it again in the crock pot.

Grilled Pineapple Mango Salsa

Loved this fruit salsa. Left out the jalapeno, but kept everything else in. Had never tried rubbing the skin off peppers. Didn't work the way I expected, so I'll have to try that part again.

Amazingly Easy Irish Soda Bread

Used the recipe, but changed the method. Like this one better than my other recipe because it uses buttermilk and adds an egg and butter for more richness. There are some key steps missing from the instructions as published. Here are my suggestions.... 1. Wisk the dry ingredients thoroughly before CUTTING in COLD BUTTER in place of 1/2 c. margarine. 2. Beat together egg and buttermilk, adding extra buttermilk if needed to bring the dough together. 3. Separate the dough into 2 portions (baking it as one large round browns the outside before it's was baked all the way through). Agree with brushing the loaves as they bake. Other reviews mentioned lowering the oven temp, but I think the higher temp is needed to achieve a good texture. Optional: add caraway seeds or reconstituted raisins or both.

Coconut Walnut Biscotti

I'm sure this recipe is great as written but biscotti really lends it self to substitutions and so I did. Followed the suggestion of other reviewers and reduced flour to 3 cups. Used chopped almonds in place of walnuts and 3 extracts: 1/2 tsp. each of vanilla, coconut, and almond. With addition of mini chocolate chips it's like Almond Joy biscotti! It's easier to slice if it cools for a full 15 mins first and don't use a sawing motion when slicing - just cut straight through.

Harvest Pumpkin Cupcakes

My son asked for a pumpkin cake with chocolate chips for his birthday, so I baked this recipe in 9" layers and added 1 cup of semi-sweet morsels to the dry ingredients. It baked in the same amount of time - 30 mins., although the layers didn't look done, they tested clean. The cake frosted very easily. Was exactly what he was hoping for - we liked it a lot!

Chicken Wild Rice Soup I

Expected more from this recipe, especially with all the great spices and veggies. Was hoping it would be similar to a wild rice soup by Panera. Will try again and this time use half white rice and half wild rice. Perhaps cooking the rice in the soup will thicken it without so much flour.
