About this Cook
I grew up in a cooking household. Today I'm a working Mom with two teens - one at home and one away at college. Lately I've been trying lots of recipes for granola bars - something that ships well and is healthy enough to eat for breakfast.
My favorite things to cook
Baking - because it's not something I do every day - cookies, cakes, cobblers, muffins, and our favorite apricot scones.
My favorite family cooking traditions
Making Christmas cookies... also hosting big family holiday dinners. Another fun tradition is New Years' Eve when we make a meal on all appetizers - my kids' favorite dinner because anything goes!
My cooking triumphs
A few years ago I made beef tenderloin for 20 people. The roast cost $80 at the local farmers market and I was terrified of ruining it! It took longer to cook than expected, and dinner was late, but it tasted great and I found it's pretty difficult to wreck such a wonderful cut of beef.
My cooking tragedies
Mistakes happen when I rush. Once while making my favorite chocolate cake (Hershey's Perfectly Chocolate recipe) I forgot to add SUGAR! It didn't rise, started to turn black, and we won't even talk about how it tasted. The kids still tease me about that one.

Rosemary Lemon Grilled Chicken
I used olive oil instead of butter. Next time I'll also make up some of the herb butter mixture with roasted garlic (instead of raw) and serve it with chicken as the original recipe does. The roasted garlic will let more of the rosemary shine through.

Spinach Caprese Salad
I like the addition of fresh spinach. Also needed coarse salt and ground pepper. Very colorful!

Pina Colada Ice Pops
As written this recipe merits only 3 stars, but I think there is great potential. Next time I'll use a very ripe fresh pineapple instead of canned. A few drops of rum flavoring might be better than the vanilla for a true pina colada taste. Decreasing the coconut milk to 1/2 a can would allow more of the pineapple flavor to shine through. I'm trying to avoid sugar, but some sugar and fresh lemon juice would brighten the flavor.
