Low-Fat Potato Soup

This is an incredible recipe! My husband loved it & will want it again for sure. I think 12 oz milk was too much for this recipe so I had about 1/2 cup leftover. I used fat free cheddar cheese & added some salt. It was fast, easy & anything low-fat yet delicious for my husband is a winner!! Thank you for sharing this.

Hummus Pizza

What a fantastic recipe! I used broccoli, spinach & vegetarian pepperoni. I also used reduced fat mozzarella & red onions (no red peppers). I did cook this differently, though-more like a quesadilla than an actual pizza! I used a whole wheat tortilla & spread the hummus (used the garlic kind) onto the whole thing-spritzed one side w/ butter spray & lay it in a skillet. I topped one half of the tortilla w/ the veggies & cheese (I sauteed the broccoli for a minute or so to soften it up beforehand). I folded it over & let the whole thing cook on medium low for a few minutes till the cheese melted. It was wonderful!! Thanks for sharing this.

Spinach Enchiladas

OK, I went through the many reviews & here's what I did! Still didn't get it just right, but the 1st time usually isn't perfect :-). For one enchilada (me!) I used 1/2 cup fresh spinach, red onions, lots of seasonings-cumin, chili powder, oregano, cayenne, a little garlic salt (next time will add more of those, and some paprika-it needed more "kick"). I also added 1/4 cup shredded chicken, used 2 tbsp fat free cottage cheese & 1 tbsp fat free sour cream. I used reduced fat mexican cheese (about 3 tbsp) & a whole wheat flour tortilla. Used my own enchilada sauce & layered the bottom with a little fat free refried beans. It tasted great but like I said, it just needed more of the seasonings I'd already used, and a few more I didn't use! Will try this again for sure because it was original, different & healthy. Vegetable Spaghetti Bake

This is such a fun recipe because it's so versatile! I used my own marinara sauce, zucchini, broccoli, some dried minced onion, minced garlic & threw in a little diced turkey pepperoni. I kinda of kicked myself for not using a large enough quantity of my veggies, but will remember that for next time. I used reduced fat mozzarella cheese & since I was in a hurry-baked it at 375. It was very good & healthy. Thank you for sharing!!

Greek Grilled Cheese

This was so creamy & yummy. I used reduced fat feta cheese & reduced fat swiss cheese. I omitted the onion per the previous comments, and at the last minute added 2 slices of turkey pepperoni, diced up. I added some oregano & garlic powder to the mixture, too. I made the mistake, though, of using my own homemade garlic butter to butter the bread with, which was still delicious, but the garlic flavor kind of overpowered the feta. Next time I'll use nonstick butter spray like I usually do. Thank you for sharing this!

Zucchini Yogurt Multigrain Muffins

These turned out great! I made LOTS of changes, though!! I used a combo of oat flour, whole wheat flour & wheat bran. Used less Splenda, applesauce (didn't use oil) & yogurt (used vanilla). I didn't even bother with the honey. Instead of zucchini, I had ripe banana to use up, which is why I used less yogurt & applesauce since bananas added moisture. I added some unsweetened coconut, too. They rose nicely & baked well, too. Very moist, too! Will try the zucchini next time.

Italian Grilled Cheese Sandwiches

This is absolutely fabulous & SO easy. I used whole wheat bread, my own garlic butter, low fat mozzarella cheese. I diced up 2 slices of turkey pepperoni to include in the filling with sprinkles of pizza seasoning & parmesan cheese. I loved the sprinkling of garlic powder & oregano on the hot bread; it added a great flavor. This is probably going to be the only way I make grilled cheese now! Thanks so much for sharing.

Pecan-Oatmeal Pancakes

These were fabulous! I didn't use the pecans (didn't have any!), used whole wheat flour, applesauce for the butter & used Splenda brown sugar. I also used oat flour for the oats. So hearty, and delicious, too! Thank u for sharing.

Playgroup Granola Bars

I just wanted to thank everyone for their super helpful reviews. I originally found this recipe on Recipezaar but the reviews here have totally helped me out with making these my own. I haven't quite figured out how to make these "my own" but all the suggestions have given me so many ideas! I liked these bars a lot but with most recipes, tweaking is needed for personal tastes. Thank you!

Red Enchilada Sauce

I can't thank the previous reviewers enough for their helpful comments! Totally made the difference! I used tomato paste (used tomato sauce the 1st time & it was as thin & tasteless as the Old El Paso sauce that I was sick of!). I used 1/4 tsp italian seasoning instead of the oregano & basil, and only used 1/8 tsp parsley. I doubled the cumin, used 3 tsp chili powder, used garlic salt & 1 cup water. It was THICK (most important to me!) & had a nice strong flavor. I can't wait to use it in my mexican lasagna recipe tomorrow night. Hope it makes all the difference in its taste. Am looking forward it using it in my enchiladas as well :-).

Super Duper Oatmeal

I really enjoyed this! Next time I will try frozen blueberries but I had a very ripe banana to use! I used quick oats, and my oatmeal cooked in a few minutes, instead of 8-10 min as listed. I also used a little more Splenda; I like sweetness! Will make again!

Ginger Salmon

I'm giving this 4 stars because it tasted good, but the baking time was way off. The glaze didn't really "glaze" due to the low temperature & I had to bake the fish for closer to 35 min. I'm thinking the flavor would've been better if it had been marinated for a few hours. Not sure if I'll make this again, but it did taste good so thank you!

Picnic Chicken Pitas

I loved this recipe! It was so quick & easy to put together. I used fat free mayo, red fat cheese & omitted the tomato. I also used fresh broccoli instead of frozen. I used whole wheat pitas & left out the bacon, but next time will try it with some turkey bacon. A keeper for sure!

Orange Whole Wheat Pancakes

This is such a delicious recipe. I loved the sweet orange flavor. I didn't have orange marmalade so I just used sugar free maple syrup on top of my pancakes. I also omitted the orange extract since I was in a hurry & they turned out fine! I used Splenda for the sugar, too. A keeper for sure!

Taco Soup VIII

My husband liked this; I'm not a huge ground beef fan but the taste was pretty good! I cut the recipe in half but still used the same amount of tomato sauce. I don't like corn in my soup so I left that out. I used pinto beans as well. I made the mistake of adding about 1/4 cup water without adding some more taco seasoning so next time I won't bother with the water at all! Since I used my slow cooker I was afraid of something burning since this was so thick, like a chili, but I don't think that would've been a problem. Served with some crushed tortilla chips & low fat cheddar cheese on top. Thanks for sharing!

Oatmeal and Applesauce Pancakes

These were delicious! I also added some Splenda & upped the cinn to 1 tsp. I used oat flour for the oats & increased the milk to 1/2 cup. I used light sour cream (all I had) & it worked fine. These were thick & hearty. Thank you for sharing!

Chicken Flautas

I was amazed at this recipe. I love flautas but have been afraid to try it on my own because of all the deep frying involved (I'm trying to stay as healthy as possible). I took the advice of a previous reviewer who gave great advice. I sprayed my skillet with nonstick canola spray, then sprayed both sides of the corn tortilla w/ more canola spray. I cooked them for about 10 sec on each side to warm & soften them for rolling. I patted the tortillas w/ a towel to collect any extra grease but there really wasn't any. I filled the 10 tortillas up (I used red fat monterary jack cheese) & baked them for 20 min. Came out great & without the unhealthy frying! Thanks so much for sharing.

Peanut Butter Cup Grilled Sandwich

Delicious! To make it healthier, I used 1 tbsp natural PB, 1 1/2 tsp mini choc chips (I know that's quite a cut in amount but I'm watching my calories & the choc flavor still came through nicely!) & sprayed whole wheat bread with butter spray so thereby omitted the margarine. I baked the sandwich at 375 for 5 min, then flipped it & baked for another 3-4 min. It was a great treat w/ some fiber & protein-plus a little chocolate for kicks! Thanks for sharing!

Baked Honey Mustard Chicken

Strawberry Muffins

Sorry these didn't work for me. I agree with others that fresh fruit seems to work better than frozen, which is what I used. Frozen strawberries just didn't do it for this recipe. I used whole wheat flour, which have created a problem, too. They came out quite flat, too, they didn't rise even with the baking powder. Anyway, it was a nice try & I had fun trying it out, so thanks anyway!
