OK, I went through the many reviews & here's what I did! Still didn't get it just right, but the 1st time usually isn't perfect :-). For one enchilada (me!) I used 1/2 cup fresh spinach, red onions, lots of seasonings-cumin, chili powder, oregano, cayenne, a little garlic salt (next time will add more of those, and some paprika-it needed more "kick"). I also added 1/4 cup shredded chicken, used 2 tbsp fat free cottage cheese & 1 tbsp fat free sour cream. I used reduced fat mexican cheese (about 3 tbsp) & a whole wheat flour tortilla. Used my own enchilada sauce & layered the bottom with a little fat free refried beans. It tasted great but like I said, it just needed more of the seasonings I'd already used, and a few more I didn't use! Will try this again for sure because it was original, different & healthy.
