Hi! I'm in my 30's & have a great husband & beagle who I love to death & love to cook for even more! Cooking is my absolute favorite hobby & I have tried & found numerous new recipes on this site which have spiced up the hum-drum.
My favorite things to cook
I'm a semi-health nut so I love cooking with boneless, skinless chicken, whole wheat flours & low fat/nonfat items. I love italian & chinese food. Whole wheat bread items also hold a high place from waffles, pancakes, muffins, cookies & quick breads. I don't think I'll ever get tired of going into my kitchen & finding new ways of turning out delicious, nutritious foods!

Hummus Pizza
What a fantastic recipe! I used broccoli, spinach & vegetarian pepperoni. I also used reduced fat mozzarella & red onions (no red peppers). I did cook this differently, though-more like a quesadilla than an actual pizza! I used a whole wheat tortilla & spread the hummus (used the garlic kind) onto the whole thing-spritzed one side w/ butter spray & lay it in a skillet. I topped one half of the tortilla w/ the veggies & cheese (I sauteed the broccoli for a minute or so to soften it up beforehand). I folded it over & let the whole thing cook on medium low for a few minutes till the cheese melted. It was wonderful!! Thanks for sharing this.

Spinach Enchiladas
OK, I went through the many reviews & here's what I did! Still didn't get it just right, but the 1st time usually isn't perfect :-). For one enchilada (me!) I used 1/2 cup fresh spinach, red onions, lots of seasonings-cumin, chili powder, oregano, cayenne, a little garlic salt (next time will add more of those, and some paprika-it needed more "kick"). I also added 1/4 cup shredded chicken, used 2 tbsp fat free cottage cheese & 1 tbsp fat free sour cream. I used reduced fat mexican cheese (about 3 tbsp) & a whole wheat flour tortilla. Used my own enchilada sauce & layered the bottom with a little fat free refried beans. It tasted great but like I said, it just needed more of the seasonings I'd already used, and a few more I didn't use! Will try this again for sure because it was original, different & healthy. Vegetable Spaghetti Bake
This is such a fun recipe because it's so versatile! I used my own marinara sauce, zucchini, broccoli, some dried minced onion, minced garlic & threw in a little diced turkey pepperoni. I kinda of kicked myself for not using a large enough quantity of my veggies, but will remember that for next time. I used reduced fat mozzarella cheese & since I was in a hurry-baked it at 375. It was very good & healthy. Thank you for sharing!!
