Cheesy Butternut Squash Pasta Sauce

It's like Mac and Cheese! Or at least close enough for the kids. I just throw it all into a pot, bring it to a boil, let it simmer until the squash is soft and whir it up with my immersion blender.

Cherry Mash Candy

Exactly what I was looking for. You have to boil it to soft ball stage...the directions seem to have been written by someone who is good at eyeballing "doneness"...I am not, so I used my candy thermometer. It's pretty close to 5 min of rolling boil.

Very good. I used garam masala because that's what I had. I also ended up adding about 2 T of butter and 1/2c of milk to the recipe because it was missing something...but that made it delightful!

Spinach and Goat Cheese Salad with Beetroot Vinaigrette

changed it by mixing spinach and arugula for the greens and feta for the cheese. Though it was hot pink in the end, the salad was wonderful and I got TONS of compliments.

Oh my! The only thing I changed was to use my buckwheat pancake mix instead of regular baking mix...SOOOO good. An excellent way to use our freshly picked berries~

Crisp Apple and Sausage Salad

oh my! I got both dandelion greens and arugula in my veggie box delivery this week. i've never prepared either...so this was a perfect use of both for a first timer! I also subbed the sausage with kielbasa and the blue cheese with gorgonzola. SOOOOO good!

Sugarless Banana Walnut Cake

Very good! I made these into muffins I gave up sugar for lent and this totally hit the spot. I used two whole bananas and added a teaspoon of vanilla. I also subbed blueberries for the nuts. I would absolutely make this again.

Stove-Top Macaroni and Cheese

i did some subs, i used cream instead of milk (i jusy had some that needed to get used) then i subbed 1/2 of the cheddar with fresh mozzerella (again...it just needed to get used) and used whole wheat penne. SOOOOO good!

Easy Indian Butter Chicken

LOVE it! I did the lower fat version and it was delicious. It satisified my need for butter chicken! I did, however, curdle my milk. But that wasn't the recipe's fault. I was cooking in an electric skillet and it's hard to control the temperature as well.

Tuna Noodle Casserole II

Good. Nice flavor and very economical. Mine was a little soupy, but I used spaghetti pasta instead of the recommended pasta...that could be why.

Penne with Garlicky Broccolini

I am going to give this a 4 because I think if I would have used bacon, it would have been a 4. Using olive oil I give it a 3. It was very bland, I even added tomatoes, TONS of salt, and italian seasoning. It was just missing something (very likely the bacon!). But I just hate to cook bacon, so I will tweak this until I am happy.

Soft Oatmeal Cookies

These were great! We prefer our cookies soft and chewy. I tossed in some raisins and some toffee chips I had lying around. I appreciated the tips about leaving them on the pan and squashing them with a fork.
