Whipped Carrot Salad

Raspberry Chocolate Torte

Yummy! But mostly it LOOKED pretty & summery--and easy to make! I took it to a family birthday gathering & made the cake ahead of time. I forgot the raspberries so I substituted cherries on top only. Pretty, but I think raspberries would be more delicious! The whipped filling/topping was so tasty!! I will be making again and following the recipe to a T! Thanks for an easy but fancy looking cake!

Irish Brown Soda Bread

I couldn't believe how easy this was to make! And it was very tasty! I shared it with friends for St Pat's day and everyone enjoyed it! Dense and hearty, it's also great with jam. I use fresh ground wheat, so I just used that for all 5 cups of flour. I didn't have buttermilk so I used regular milk w/vinegar. Thanks for an authentic recipe!

Pumpkin Crunch Cake

Fabulous and easy! I used fresh pumpkin puree...used another reviewer's (VickiW) recipe for spices and it was so good! Warm or cold, this was eaten so quickly! If you want something different from the traditional pumpkin pie, try this!

Awesome Pasta Salad

This was a very good pasta salad recipe and easy to adjust to your own taste. I highly recommend you use an Italian dressing you LOVE, and then you just can't go wrong. I didn't have any of the meats and my family still enjoyed it!

Apple Spice Rice

I have to agree that this isn't the best recipe, but it's not bad. If you like lots of flavor, this might need more tinkering, this is somewhere in the middle between plain white rice and full flavored rice with a kick. This is definitely easy to make though.

Best Ever Crab Cakes

I've never liked crab before, but for some reason I found myself with a whole fresh crab and I needed a recipe! This seemed to be one of the easier crab recipes and to a nonseafood eater--it was okay! I had everything except the tarragon--had no idea what to replace it with. Easy to make, and my husband said it tasted like other crab cakes he's eaten! If you aren't a seafood type, I suggest a little less crab and more crackers...maybe more seasonings. I'd eat them again!

Candy Cane Chocolate Chunk Cookies

Loren's right--we've decided this cookie will be made every Christmas! My kids loved crushing the candy cane (I double ziplocked them). I only made a couple of changes as suggested by other reviewers...1 cup of chocolate chips and on the first batch I made, I added several drops of red food coloring since it seemed mostly white after I crushed the candy cane. Well, some cookies look fine, others look like open surgery! So the next batch I didn't add the food coloring and there was still plenty of red flecks in the cookies-a good lesson learned! The cookies are fabulous and I'm not even a huge peppermint fan-thanks for a fun recipe!

Sauteed String Beans

I needed something different for fresh string beans and this seemed easy enough. I liked sauteeing the beans and the garlic powder was good, although I think I will use fresh diced garlic next time. My husband didn't like the flavor from the cocktail onions, I think since it's mostly vinegar! I thought it added a little punch without being overly powerful, but next time I will try the onions themselves without the liquid. Overall, we enjoyed this for a simple, but different way to eat the same old (but yummy) side dish.

Feta Cheese Foldovers

Easy to make! Versatile! Delicious! I made them for a church function and they were gone-everyone seemed to enjoy them. If you love feta cheese, this is a great recipe. I used basil & dried roma tomato feta. My husband saw me pull them out of the oven and said they LOOKED delicious (and he didn't know what I was cooking!). Thanks Christine for sharing!

Brazilian Chicken with Coconut Milk

I'm giving this recipe 4 stars from my husband. I prepared this meal especially for him because he likes spicy food. I tried it, but my mouth was burning all night-I am defintely a mild to barely moderate spicy food person! I didn't have jalapenos so I used two serrano chiles instead, and skipped the turmeric since I didn't have any. Like another reviewer I cheated with canned tomatoes, but I don't think that made too much of a difference because it gets cooked anyway...we couldn't really taste the coconut milk and I used it fresh from the nut, but as I said my husband did enjoy it anyway! I would like to try this again, with only a fraction of the cayenne pepper and no jalepenos or chiles for my sensitive taste buds!

Fruity Bundt Cake

I sit here writing this while I munch on a piece of the cake! I had fresh coconut and needed a way to use it. I didn't powder the coconut, just used it grated and threw it in with the rest of the fruit. I didn't have blue berries or nuts, although I think the nuts would be fabulous! I also used only a 1/2 cup of oil and 1 cup of applesauce and the cake was very moist and yummy! I only cooked it 1 hour, any longer would have burnt it... thanks for a yummy recipe.

Ground Beef and Sausage in Red Beans and Rice

This looked interesting. I made a lot less though, only 2 cups of uncooked rice, half a kielbasa and I just eyed the amount of ground beef I wanted to use. I still used about 1/4 cup onion, about a teaspoon of garlic and LOTS of cajun seasoning, which had cayenne pepper and other spices in it. Salt & pepper to taste. I used 1 can each of black beans and kidney beans. It still made PLENTY. I did add about 1/4 water and a little 'juice' from the black beans since other reviewers said it was dry. I'm glad I did. It was tasty and I think it will taste even better as leftovers. This was easy to modify to my taste, don't be afraid to experiment.

Cranberry-Pumpkin Cookies

Extremely soft! WARNING: You may eat all the cookies yourself! After I tasted the first cake-like puff of deliciousness I had to have another! My first bite was mild and lightly pumpkiny and the next bite was fun and tartness with the dried cranberries I used. I made my cookies with fresh flour, fresh pumpkin (not pureed-I still had teeny bits) and substituted allspice for the cinnamon. I didn't have nuts but these are very yummy anyway and they look beautiful-they came out perfectly round and full!

Pumpkin Bread IV

Delicious! Used fresh pumpkin puree, 1 tsp of cloves as suggested by other reviewers and it was fabulous! It's A LOT too! Used freshly ground whole wheat flour, 2 cups white and 2 cups of brown sugar. I made two 9X5 loaves and a whole bunch of muffins! Moist and yummy!

Peachy Pork Chops

My husband was excited about this before I cooked it. After dinner he decided it was too bland and doesn't want me to make it again. I think it was very good, but felt like I needed to have a bite of peach with every piece of meat other wise the pork by itself was plain tasting. The peaches and sauce were very tasty and I enjoyed it. I cooked slightly longer as I had really thick chops, but the sauce thickened up nicely and weren't tough.

Easy Caramelized Onion Pork Chops

Okay, so there was some extra water that had to evaporate, but it's really not that big of a deal. Basically it's a good recipe, just experiment with it depending on your taste. I added a few cloves of minced garlic (love it), some seasonings, and another onion and my husband and I enjoyed it and it wasn't dry--a problem I tend to have. Give it a chance-it's yummy.
