Fresh Rhubarb Pie
After trying several pie recipes to use our Rhubarb in, this is the one. Comes out right every time. I follow the recipe exactly. I use a frozen pie shell for the bottom, and store bought rolled up pie crust for the top, but I re-roll it so that it's a little thicker, then brush it with butter right at the end and sprinkle a little sugar over that. It really doesn't get any easier than this.

Black Bean and Couscous Salad
Great salad! I made it a little different. I ommitted the corn and added a can of lima beans, 1/2 cup chopped black olives, a red onion instead of green, and parsley and a dash of mint instead of fresh cilantro (didn't have any). It came out great. I think this is a great base couscous salad and would go well with almost anything you wanted to add in.

Classic Macaroni Salad
I made this using leftover salad, rotini, and shell pasta from my pantry. I also added some red cabbage, and omitted the carrots, and used red wine vinigar instead of white. It came out great. Next time I make it I will cut back on the sugar just a little. This one is definately a keeper.
