Chocolate Trifle

Everyone loved the presentation and it got lots of compliments, I only gave it 4 stars just b/c I wasn't as impressed as I thought I'd be based on the other reviews. It was good, but not amazing. I did what many other reviewers suggested and that was to use 1/2 pint whipping cream w/ 3 T sugar as a substitute for the cool whip in the chocolate mousse layer, I think this was a good idea b/c otherwise it really would have just tasted like brownies w/ cool whip. I also used the triple chunk brownie mix. Will make again.

Chocolate Covered Strawberries

Super easy to make. I've tried making these before with just chocolate (no shortening OR paraffin) and couldn't figure out why the texture was off. Obviously now I know what I was missing! So yummy. Oh, and the tip to dry them in styrofoam is great, they look much prettier.

Zucchini Brownies

These just didn't do it for me...not sweet enough and too dry. Other reviewers said the frosting wasn't necessary, but I ended up adding some store bought frosting just to make these edible.

Baked Lemon Chicken

This was really pretty good, although it did turn out a little soggy. I'll try using different bread crumbs next time (used the italian seasoned store bought this time). Overall it had a really good, light lemon flavor and kept the chicken very moist.

Blonde Brownies I

These were really too sweet for my taste and that's pretty hard to do. I used mostly semi-sweet chips w/ a handful of butterscotch chips and it may have been the butterscotch that was too much for me. My husband ate them up, but of course he wouldn't let any sweets go to waste :)

Chicken In Basil Cream

This was so good! I diced the chicken first and used sundried tomatoes instead of pimentos and I doubled the cream sauce b/c I was serving it with pasta. Only recommendation for changing is for me, I thought the cream sauce with the fried chicken and pasta was too heavy. I would serve it with grilled chicken next time, however if you are just doing the fried chicken this sauce is a great addition. Trust me, we all thought it was great, but I would just prefer that slight change next time. Definitely give this a try.

Winter Fruit Salad with Lemon Poppyseed Dressing

This is so yummy & easy...everyone was asking me for the recipe for the dressing. I changed up the salad a little to accomodate what was on hand. Used the suggestion of raisins soaked in orange juice since I didn't have any pears (very good). Also used candied pecans instead of cashews. Will definately make again! Thanks.

Autumn Apple Salad II

So easy to make with ingredients usually on hand. I've made this 2x this year & people always go back for seconds & thirds. I usually use 1/2 tart & 1/2 sweet apples and have yet to make it w/ the cherries so don't worry if you don't have them it's still just as good. I've never used any preserver and my apples aren't brown 2 or 3 days later. I think the yogurt helps preserve them. Also, I like it better when it's made the day before.

Smokin' Scovilles Turkey Chili

This was pretty good, but not as hot as I would have assumed it to be. I used 1.35 lbs ground turkey, so added a can of black beans, and used a whole can of corn. I did not add the 1 Tbs of hot sauce at the end. It was good & the hot chocolate does cut down on the sweetness, but I was surprised that all people that tried it said it was sweet, not hot. It had a good taste, but not what I was going for since I was entering a hot category in a chili cookoff! A note to pepper virgins: wear gloves when dealing w/ a habanero pepper or you will literally burn your fingertips. Learn from my mistake :)

Barbecued Beef

I've made this twice in the past 2 weeks (b/c my husband begged me to make it again) and we loved it both times. However 1st time I made it I followed recommendations of reviewer "Ash" and cooked it in beef broth, then added the sauce later. It was good, but I used approx 2 lbs London Broil and it definately needed to cook longer than the suggested 5 hours of her review. Yesterday I made this again and followed the recipe EXACTLY (except again used 2 lbs London Broil) and this turned out wonderful. Oh, I didn't have any liquid smoke so omitted that as well. It did cook for 8-9 hours and it was great.

Pumpkin Turkey Chili

I've never made chili before, but this was super easy & I thought tasted great. I did add a can of corn & it would have been great w/ black beans but my husband doesn't do beans, so left those out. This does make a really thick chili, so next time I would follow other suggestions of adding chicken broth to thin it out. Otherwise, it is definately worth a try & the pumpkin is a really nice fall touch.

Peachy Chicken Picante

This was very good. Sweet & spicy. I would suggest having an extra can of peaches on hand just in case b/c this didn't make enough sauce for our liking. Also, as other reviewers suggested I too sliced the chicken up before cooking and we served it over brown rice (which I guess is why I wanted extra sauce). We'll definately make this one again.

Fruit Dip II

This is soooo easy and always a hit at parties. I've served it w/ strawberries, pineapple, and banana slices. It might be too thick to actually frost a cake with, but I have served angel food cake slices with a dollop and some sliced strawberries...yummy

J.P.'s Big Daddy Biscuits

I have never made homemade biscuits before but this recipe sounded easy enough. I couldn't have been more wrong. The taste of these were horrible. They were so sticky that I think I used too much flour on my hands, on my countertop, on my rolling pin, etc that they were like bricks when I took them out of the oven. They literally came out of my oven and straight into my trash can. I think I'll stick to the storebought biscuits if this is what making biscuits is like. Sorry, but these were not for me.

Broccoli with Garlic Butter and Cashews

My husband and I LOVED this recipe. Such a change from the old brocolli w/ cheese. If anyone has ever eaten at PF Chang's, then this sauce is similar to their Mongolian beef sauce or Chicken lettuce wrap sauce. Very yummy.
