Slow Cooker Sweet Potato Casserole

Made this for Thanksgiving. It was fab. I used suggestion of a little cinnamon in the 'topping' and layered it. I beat the potatoes with a mixer, and wish I hand't... they were a little too 'pureed' and didn't maintain the sweet potato texture. Wish I'd thought of that before. Will absolutely make again.

Butternut Squash, Apple, Onion Au Gratin

Made in a crock pot (to save oven for pork roast) and i WAY overcooked this dish. I'd recommend maybe 2 hrs, because 4 turned the whole thing to mush (i doubled the recipe, but even still... way too soft). It was tasty though, so it wasn't a disaster.

Cake Mix Cookies VIII

Used yellow mix, the 1/2 c butter, + 2 T oil, 2 eggs, coconut and semisweet chips. Fantastic!! I didn't think they needed the vanilla someone else recommended. Will be trying other variations!! Great recipe!

Kerry's Beany Salad

I've been making this for years. Great at potlucks (on 'international' day for themed parties). This is fantastic with quesadillas. I like a little extra cilantro. Have also made with wild rice (for extra nutty flavor and more color). Whip salad in 'bullet' or processor for a thicker dressing if you want it to stick a little more to the grains.

Cranberry Pistachio Biscotti

This is my new 'signature' cookie around the holidays. Everyone RAVES about it. I have to decrease the pistachios a little in order for it to stay together better, but it is a FANTASTIC recipe! Good job!

Creamy Butternut Squash With Cinnamon Soup

Delish! Since roasting the squash (cut side down, 400 degrees, 45 mins) helps keep in the nutrients, i roasted the squash, then followed the recipe exactly. It was incredible.

Smothered Filet Mignon

Unbelievably good!! I made it in my panini maker (it was 7 degrees outside the day i made this) then put the filets under the broiler to melt the cheese. Wouldn't (and didn't!) change a single thing!!! It took about 10 minutes on the panini grill on med/high.

Champagne Punch III

Made this for my 2008 champagne party. Might want to go with a low pulp lemonade... the pulp stuck to the bottom of the flutes. Also made it for Christmas... very tasty!

Bacon-Flavored Dog Biscuits

Because I don't save my bacon grease, I went to a diner and asked them for some. I ran out of wheat flour, so i filled up the remaining 5 c of flour with cornmeal and white flour. The dogs love them!

Quick and Easy Alfredo Sauce

UNREAL how good this was!!! I followed another person's suggestion and brought the cream cheese to room temp. Instead of garlic powder, i used minced garlic, only because i didn't have powder, and it seemed to make sense. Really, a PERFECT sauce!

Skillet Zucchini

Fabulous!!! Had white cheese instead of cheddar, so I used that. I think it was fantastic with white (jack) cheese, so I'll probably make it again with that. Could have used more tomatoes (i only had one). This will definitely be made again as the tomatoes ripen in the garden!!

Strawberry Bread

I needed to cook it much longer, perhaps it was because i was using a stone loaf pan? Anyway, i tried with the 1 T vanilla someone suggested, and that ruined it for me. Then i made it without the vanilla, and it was super. This really helped use up the strawberries we had. Natch, it's good with strawberry cream cheese!

Bread and Butter Pickles II

Fantastic! I followed the suggestion to thoroughly rinse the salt off the veggies. For flimsy pickles (the way I like them), go really thin... for crisp ones, go thick. Made this with one MONSTER zucchini and one regular sized zucchini. Lowered time to 2 hrs sitting since zukes aren't as dense as cukes.

Zucchini Bread II

I typically don't like Z bread because it's usually so soggy and cinnaminny, but this was delightful!!! I'm glad i read that it makes more than one loaf, but i only have one loaf pan, so put the remainder in a small square casserole. Like all fruit quick breads, i chilled it overnight before slicing. It was heavenly!!

Peanut Butter and Pumpkin Dog Treats

Apple Pork Chop Casserole

FANTASTIC!! Used 3 apples (they are homegrown, so a little smaller than store bought), full can of soup, and a full box of stuffing. I absolutely couldn't get enough of it!!! I used a cast iron skillet for baking, since I already had it out to brown the chops. Worked like a champ!!!

Baked Spaghetti

We call this "Baked Spaghetti PERFECTION" in my house!!! Doubled the sauce, used ricotta instead... PERFECT!!! Sits up better if given a few minutes 'rest' in the pan before serving.

This was AMAZING!! I changed NOTHING. Made this for a baby shower, was inundated with people wanting the recipe! It got too juicy near the end of the party, but that soaked up nicely on bread!

Red Beans and Rice

Fantastic!! I spiced it up a bit w/cumin, chili powder and garlic pepper, and used my own canned tomatoes. My son loved it, which was great since he's so finicky. Oh, i doubled the beans as well... good idea!
