Awesome Baked Sea Scallops

Fantastic, but didn't need the topping. Will make again and again w/out the topping. Had noodles w/white sauce on the side. Of course, some people just put the scallops on top of the noodles/sauce and they were VERY happy people!

Pear Honey Cranberry Sauce

Heaven on a stick!! Followed exactly, used organic pears, fresh crannies. SUBLIME! And a beautiful color! I love how the pears soak up the honey and maintain a bit of their crunch. MMMMMmmm!

Carrot Souffle

SUPERB!!! My family LOVED this for Easter! Beautiful color. I cooked it in a flat 2 qt dish so that it wouldn't take so long in the oven. Used splenda in place of sugar, egg beaters in place of eggs... FANTASTIC!!! Did NOT put powdered sugar on top.... didn't need it.

Spinach Lentil Soup

Fabulous. Used skinless turkey keilbasa, made it easier to eat, harder for teenager to turn nose up! Switched stock/water values. Will use more keilbasa next time (and double/triple!).

Slow-Cooker Chicken Tortilla Soup

Made this stovetop instead. Browned partially frozen breasts, and left the water that came out of them in there... used that water as the water it called for. Followed recipe but added drained black beans. FANTASTIC!!

Poached Orange Pears

FABULOUS! Used red skinned pears. Followed recipe but for berries. Used another suggestion and put flavored cream cheese (i used almond flavoring),and drizzled butterscotch sauce on top, with some crushed pistachios over. It was a huge hit on 'games night', and was nice that i could put the pears in and play with my guests w/out standing over the stove.

Homemade Black Bean Veggie Burgers

Very good. I upped the egg and bread crumbs, put it all thru the food processor and baked it. I only got three good sized pattys, which was fine. Served w/salsa and melted cheese.

The Best Thai Coconut Soup

Very good. I added some tofu, and it was very nice. Couldn't find lemongrass ANYWHERE, and it definitely was missing something. Later found some at a specialty store, will use it next time.. and there WILL be a next time!

Corn Dog Casserole

The flavor was good, but i guess i didn't go shallow ENOUGH (I halved it)..... it took forever to cook, and the cheese on top burned. In hindsight, and for next time, i think i'll go with my cast iron skillet as the casserole dish. I used the celery and onion, and was happy that i did.

Cranberry-Pumpkin Cookies

These were very good, but a little too soft. The only change i made was 1/8 t. of lemon extract since i didn't have an orange to zest. The flavor was very nice. Very easy to make, too!!!

Red Beans and Rice

Fantastic!! I spiced it up a bit w/cumin, chili powder and garlic pepper, and used my own canned tomatoes. My son loved it, which was great since he's so finicky. Oh, i doubled the beans as well... good idea!
