Zucchini Casserole I

Yum! We used half the oil as well, left out the cheese since I didn't have any, and added some extra corn flakes on top. Super good!

Whole Grain Waffles

These were great! Just used 1 3/4 cup whole wheat flour and 1/2 cup oatmeal (what I had) and followed the rest as written. They were light, fluffy, and delicious!!! From the 2 year old to the 60 year old--all approved!

Easy Turkey Taco Soup

Different and GREAT! We love the difference of the mixed veggies and ranch packet. I used chili beans undrained for that's what I had on hand. Super easy soup to add to the mix--thanks!

Light and Fluffy Spinach Quiche

Wonderful! Per other reviews: sautéed onion, garlic and one shredded carrot; layered fresh spinach in store-bought pie crust with onion mixture and cheese; used 1/4 c each milk and light mayo with 5 eggs; and baked per directions. YUMMY!

Easy Broccoli Quinoa Soup

Great! Toasted the quinoa in a dry skillet first, used choppoed frozen broccoli (thawed), and used chicken broth instead of the water and bouillon. I did have to add quite a bit more milk (only had the one can of evaporated milk and that wasn't enough) and it still really wasn't soup consistency. However, it was really tasty! Topped with shredded cheddar-yum.

Twelve Minute Pasta Toss

Loved it! Per reviews, I added the oil from the tomatoes and boiled down some chicken broth for more sauce. I used chicken and shrimp and whole wheat angel hair pasta. Thank you!!!

Tempting Tuna Salad

Amazing!!! Like others, I used it as a jumping off point--used two cans albacore, a mix of toasted walnuts and sunflower seeds (it's what I had), and guessed on the mayo. SO GOOD!!!!! And yep, the apples stay crunchy the next day! Thank you!

Asparagus, Feta and Couscous Salad

Yum!!! I used brown rice (cooked in chicken broth), left out the tomatoes (I just don't like them), used 3 Tbs light balsamic dressing, added enough feta to taste, and the kicker, added dried cranberries and sliced roasted almonds. Holy cow--yum!!!

Tuna Pizza

Yum!!! Different and really good! We used two cans per recommendations and that is a must. I tossed the water packed tuna in a little olive oil and oregano, used reduced fat cream cheese and added capers to my husband's side. Thanks for the recipe!

A Simply Perfect Roast Turkey

Holy cow...follow this recipe to a T and you will have a beautiful, golden brown, delicious and juicy turkey!We made this full size at Thanksgiving and again today, only half size, and both turkeys were perfect!!!

Garlic Asparagus with Lime

Asparagus is not my favorite; however, this recipe is delicious! I have tried many similiar recipies, but the flavors and method of this recipe is simply delicious! The only changes I made were to use a little less butter & olive oil and lemon instead of lime. A keeper!!!

Apple Crumble Pie

Excellent! Followed tips from reviews: used 1/4 c white and 1/4 c brown sugar, mixed with cinnamon and added 1/4 c flour to mix with apples and then poured in the pie crust. Baked at 400 for 10 minutes then t 350 for another 30. I did need to cover the edges for they started to burn. M husband says it is the best apple pie he's ever had (and both our moms bake delicious apple pies!)!

Amish Breakfast Casserole

Really good! Followed several tips from reviews--cooked bacon in the microwave and crumbled when cool; cooked onion in olive oil (will use hashbrown with peppers & onions next time); used 9 eggs instead of 6; used recommended cheeses (even though I'm not a fan of swiss); mixed everything together except reserved 1 cup of the cheddar cheese to spread over the top); made the day before and cooked at 350 for about 45 minutes. Excellent!

Puppy Chow I

There are a lot of varations out there for this recipe, but this one is the best! This gives you really coated, flavorful puppy chow. We think Jif creamy peanut butter works best too. Enjoy!
