Beef Taco Skillet

Good recipe. I added onions, garlic, cummin, and chili powder to spice it up. Also added black beans to increase nutrition and used whole wheat tortillas, they hold up better. Corn tortillas work great as well if you don't like mushy tortillas. The kids love this recipe and it is fast.

Pineapple Ham and Rice

This turned out well but I changed the recipe more than I intended. I didn't feel like heating up the house so I prepared it in a skillet. I added onion, matchtick carrots, jimaca, and red pepper to enhance it a little bit. I also cut the sugar in half and used brown rice. With a salad it made a good summer meal.

Golden Sweet Cornbread

This recipe is wonderful, I made it with whole wheat flour and it turned out just as well as when I made it with white flour. It's become mandatory on chili night.

Whole Wheat and Honey Pizza Dough

This was wonderful tasting and very easy to make. I am always looking for easy recipes that use only whole wheat flour. I have made this twice for pizzas once a big pizza once for small indivdual pizzas. My kids liked this crust so much I rolled out and baked the individual crusts and they topped them and ate them before I could cook them again. My daughter used a leftover crust for her cold lunch the next day. I also used the recipe to make bread sticks, I brushed with a little butter and sprinkled with garlic and sald. They were great.

Classic Gingerbread Cutouts

These cookies were so easy to make. I laughed when I saw it only took an hour to make them but I was cleaned up and finished an hour after I started them. They were easy to mix and the easiest cookies I have ever rolled and cut. My three year old helped me and we didn't even have any fall apart. I only gave 4 stars though because as far as flavor they are not spectacular. I am thinking some orange zest and more spice would jazz them up.

Caramel Brownies

These were extremely chocolaty and delicious. I made them for a birthday pary and everyone raved. I even added too much flour by mistake and they still turned out wonderful, they are very thick and chewy.

Easy Whole Wheat Peanut Butter Cookies

I added oatmeal, flax, and wheat bran to this recipe since it was so gooey to begin with. It really turned out well. Very easy to make, my kids and nieghborkids ate them up and asked for more. The honey taste if very strong but very good. Like a peanut butter honey sandwich. I will probably add some dried cranberies or raisons to my next batch.

Oatmeal and Wheat Flour Blueberry Pancakes

Great recipe, my family loved it. Very filling, my daughter will normally eat half a batch of pancakes but stopped after three of these. I put the leftovers in the freezer with wax paper inbetween each one, we pull them out and warm in the toaster, they taste even better than when fresh. Next time I will try to use applesauce instead of oil and eggbeaters to make it a little more diet freindly.

Mexican Rice

Great recipe, I left out the chilis and uset canned diced tomatoes instead of salsa because that is what I had. I also added black beans and used instant brown rice wich cut down the cooking time. It was very good, my kids loved it. I made enough for two meals for my family of 5, leftovers were also great.
