Pecan Pie Bars I

Reviewed: Dec. 23, 2006
A very good pecan pie bar recipe. It is quite different in taste from the one I am used to but I am glad I tried it. I also cut the recipe to 24 servings and baked it in a 9X13 glass dish. I baked it longer than the recipe called for maybe about 35 minutes. I put it in the refrigerator after it cooled because I thought it was not going to set up. I took it out of the frig the morning I served them and they were fine. They taste just like pecan pie. I will definitely make this again. Thanks to the other reviewer who suggested the changes I made.

No Bake Cookies V

My husband loves these cookies. They are a must at Christmas at our house. The only difference I make was to increase the vanilla to 2 tsp. Very good!

Cinnamon Sugar Biscotti

Reviewed: Dec. 6, 2006
This was my first time making biscotti and I had some trouble. My ingredients did not form a dough. I had to very firmly press the ingredients into logs. There was no way I was able to roll the dough. I probably should have softened the butter but the recipe did not say to do that so I didn't. I was careful when I cut the cookies so they would not crumble. The flavor was very good. I will definitely make these again just with softened butter next time.

Herb Marinated London Broil

Reviewed: Dec. 2, 2006
Good marinade. Unfortunately, the first marinade I tried was G's Flank Steak Marinade from this site. We compare all other marinades to that one since we love it. This marinade is definitely good but we still like G's better.

Parmesan Potato Rounds

Reviewed: Dec. 1, 2006
My mom found this recipe years ago in a Taste of Home magazine. She made it while I still lived at home. I have made it a few times since I got married (minus the onion thanks to hubby's dislikes!). It makes a good side dish (better than other parmesan potato recipes I have tried).

Parmesan Baked Potatoes

Reviewed: Dec. 1, 2006
I cannot give this recipe rave reviews. It was just okay for me. I could not really taste the cheese. I added more fresh parm to the top of the potatoes after baking. I did use olive oil instead of butter. I never use butter much so am used to the taste of olive oil. I do not know if using olive oil changed the taste or if I did cooked them to long but I probably will not make this again. Sorry and thanks anyway.

Braised Balsamic Chicken

Reviewed: Dec. 1, 2006
My family liked this recipe. I liked that it called for alot of seasoning since I take the onion and tomato off for my children. Without the veggies the chicken must still be flavorful since my oldest ate his without complaint. I liked the recipe pretty much as is. I might decrease the balsamic vinegar just a little bit.

Mom's Sweet Potato Bake

Reviewed: Nov. 23, 2006
I made this recipe for Thanksgiving and it got rave reviews. I did cut way back on the sugar (1/4 cup) and also only used 1/2 tsp salt. This is the best casserole recipe I have ever had. I will definitely be making this again and AGAIN!!!

Good pie crust recipe. My aunt really liked it. I am not sure I will give up my crust recipe with shortening but this recipe will stay in my file.

Cranberry Sauce I

Reviewed: Nov. 23, 2006
I have never liked canned cranberry sauce or jello salad but it was my job this Thanksgiving to bring the cranberry salad so I brought this one. It was wonderful and so easy to make. My 2 yr old loved it! I will never serve anything but this homemade sauce from now on. I did follow one other reviews suggestions of 1/2 brown sugar, 1/2 white sugar, 1/2 oj and 1/2 water. Thanks for the wonderful recipe Toni.

Basic Pasta

Reviewed: Nov. 21, 2006
My family loves homemade pasta. It is a little time consuming to make and cut the pasta but it is worth it! My husband bought me a Kitchen Aid mixer with pasta attachment. Love that man! This is so quick to make now.

French Onion Soup VIII

Reviewed: Nov. 21, 2006
I skipped the wine because I was out and the flour (I do not like a thick broth). I added a little bit of thyme. I really liked the addition of the bay leaf. I do not carmelize the onions just cook them until soft and the soup is still good. I also use mozzarella instead of swiss. With these additions this will be the soup recipe I keep. Thanks for the recipe.

Slow Cooker Pork Chops II

Reviewed: Nov. 15, 2006
I would have rated this 3 1/2 stars if possible. It was not wonderful but it was not bad either just okay. I will make this again since my family ate it without any complaint. It was easy and the meat was tender. Thanks for the recipe.

Whipped Mashed Potatoes

Reviewed: Nov. 14, 2006
My husband could eat his weight in mashed potatoes. I do salt the potatoes while they are cooking. I use an electric mixer for the entire process. I have nevered used a potato masher. I also use a little more milk about 1/4 cup. Very good!

Creamy Baked Chicken

Very good recipe! It can easily be adapted to the slow cooker. My family loves this served over rice and noodles. I really like the combination of the mushroom and chicken soup. Great recipe.

Fat Free Refried Beans

Reviewed: Nov. 14, 2006
I think this recipe has promise so I rated it with 4 stars. I used one can of black beans slightly drained. I decreased the salt and pepper as other reviewers suggested and still was surprised by how salty it was. I added water like the recipe called for and it made it edible but too watery. On the whole it had a good flavor and I will make this again with next to no salt in it. I did add a pinch of cumin. Good recipe after some adjusting.

Mexican Rice II

Reviewed: Nov. 14, 2006
I gave this recipe a 4 simply because I felt it was too salty. I also cut way down on the oil and used olive instead of vegetable. I did not really fry the rice. I just toasted it a little bit in the oil. I also omitted the onion since my husband will not eat anything with onion in it. I did add some onion powder. Other than being too salty, it was a very good recipe. Both my boys ate it up. I will definitely make this again. I served it with the Lime Chicken Soft Tacos and Fat Free Refried Beans from this site.

Lime Chicken Soft Tacos

Reviewed: Nov. 14, 2006
I really liked this recipe. The chicken is a little on the dry side but in my opinion has plenty of flavor! I doubled the red wine vinegar and lime juice (3 Tbsp bottled juice 1/4 cup vinegar) based on reviews I read. I think if you simmer it slowly with the lid on you might not have to double the liquid. I did not double the seasonings just the liquid and thought it was good. I might decrease the seasonings next time if I do not double the liquids.
